00:04And I'm showing you how to make it.
00:13Key lime pie is surprisingly easy.
00:16You can make it at home for half the price
00:17of buying it out somewhere.
00:19And there's just so much perfect about key lime pie.
00:22You've got the crunchy, buttery crust
00:25with that creamy, tangy filling.
00:27And then I'm gonna make a special little topping for it.
00:30It's just gonna be a party.
00:31Party in here, party in your mouth, party of summer.
00:34Graham cracker crust is essential in a key lime pie.
00:37Don't let anybody tell you otherwise.
00:39Just wanna break them up into a food processor
00:42and add in a quarter cup of sugar.
00:44Pulse that until it's all broken down.
00:47And then go in with some melted butter.
00:48I'm using salted butter because you gotta have
00:51that kind of salty, sweet combo here.
00:54I'm just gonna melt this.
00:57Oops.
00:58Microwave my coffee about 10 times a day.
01:09Truth is, when it comes to key lime pie,
01:12most of the time I've made the no-bake,
01:14three-ingredient key lime pie with frozen limeade.
01:19Nothing wrong with that when you're having the craving.
01:21But this is really so easy,
01:22I don't know why I don't do this more often.
01:24In goes the butter and then you wanna pulse it
01:26until it's wet sand.
01:30Scrape down the sides.
01:32Make sure you don't have any like huge cookie chunks,
01:35but that's what you want.
01:36Kind of wet sand feel.
01:38See how easy that was?
01:39And you're just gonna press it into a pie plate.
01:42You don't have to grease it
01:43because we have butter into our crust.
01:46I just love it.
01:46Give me a key lime pie any day over a cake.

01:56Okay, when it comes to forming your crust
01:59into your pie plate,
02:00a measuring cup is a great tool to use
02:02and you don't wanna pack it down.
02:04If you pack it down too much when it cooks,
02:06it's just gonna be hard as a rock.
02:08So you just wanna lightly pack the crust down.
02:12So I'll get it going a little bit with my hands,
02:14smooth it out.
02:15You just want it to be evenly distributed.
02:17I like it to come up all the way on the sides of the pie
02:20so that you get a good crust to filling ratio.
02:24Loosely packed in there.
02:25It goes into the oven, 350 degrees,
02:27just until it's fragrant.
02:30All right, let's talk limes.
02:32If you wanna make this pie,
02:33you're going to need 2 3rds cup of lime juice.
02:36If you want to make it truly authentic key lime,
02:39be my guest.
02:40This recipe is going to turn out beautifully either way.
02:43You can also use the bottled key lime juice.
02:45Don't use bottled regular lime juice though.
02:47Or you can just use regular limes.
02:49I'm gonna show you why I'm gonna use
02:51regular limes.
02:51So this is your key lime juice.
02:53It took me squeezing all of these limes
02:57to get just half of the juice that I need.
03:00They also contain a lot of seeds.
03:03So it comes at a price of just a little more work.
03:05So it's whatever you feel like doing.
03:08If you wanna use the bottled stuff,
03:09you can see how close this is.
03:11This is like the real deal.
03:12But the color is just the same.
03:15I'm staying true to the real Nicole
03:17who is too lazy to do all that,
03:20but also wants true fresh taste.
03:22So I'm using whole real Persian inexpensive limes.
03:27What's good about these is there are no seeds.
03:30And you need a fraction of the amount
03:32to get the required amount of juice.
03:35But what I also love is that the color is better.
03:37To me this is just like a little bit of a greener color.
03:40So you can see fresh, just regular lime juice
03:43versus key lime juice.
03:44And this is why I'm using the regular lime juice.
03:47Did I didn't set an alarm?
03:48I didn't set a timer.
03:49But I smell it.
03:51When your crust is done,
03:52you wanna let it cool to room temperature.
03:55Now the filling has minimal ingredients.
03:58Like it could not be any easier.
03:59I'm gonna use one and a half cans of sweetened condensed milk
04:02but don't worry.
04:04I'm gonna put that other half to use
04:07in the best way possible.
04:08This is what gives key lime pie its unique flavor.
04:11All recipes, whether they're no bake or bake
04:14have this ingredient.
04:16I'm gonna use the whole can
04:17plus like a half a cup from this can.
04:22And don't be getting that like fat free stuff.
04:25To that I'm adding in three egg yolks.
04:28You can discard the white or save them for omelets.
04:31Just want the yolk here.
04:32This is what's also gonna get, oh.
04:35I'll just save the whole thing for omelets.
04:39What I was saying was the yolk gives it
04:41that kind of creamy color.
04:44Almost like a little bit of a yellowish orange tint to it.
04:47But this is classic.
04:48So I'm using three egg yolks in with the condensed milk.
04:52I'm also adding in a third cup of sour cream
04:55and then about a half a teaspoon of lime zest.
04:58I love seeing these little flecks of lime.
05:00So I'm gonna get this going
05:02and then just kind of add in the juice as it's going.
05:08See that pretty, just kind of creamy vanilla type color.
05:12And I can taste it.
05:14Taste it already.
05:16When the crust has cooled,
05:17we just pour the filling right in.
05:19Smooth it out and pop it in the oven,
05:21350 degrees for about 15 minutes.
05:24You want it to still jiggle a little bit in the center.
05:27Like me.
05:28Just kidding.
05:30You see how jiggly it is now.
05:33We just want to cook it to where just the outer edge
05:36starts to set,
05:37but there's still some wiggle room in the middle.
05:40I like to bake it on a rimmed baking sheet.
05:44It just helps taking it in and out of the oven
05:45a little easier.
05:46And this just takes about 15 minutes.
05:51All right, while our pie bakes,
05:53I'm gonna make my special topping.
05:56What goes really well with key lime pie
05:59is a little coconut.
06:00I don't want flakes of coconut on top,
06:03but I can do a coconut flavored whipped cream.
06:08I'm also gonna put this to use
06:11for another reason in a minute.
06:12If you want to stay around for that.
06:16So we're just gonna make some homemade whipped cream.
06:18A lot of time on key lime pie, you see meringue.
06:21Just not a fan.
06:22Just not a fan.
06:23So I'm just gonna put into my bowl
06:25some cold whipping cream.
06:29And then just whip it up.
06:34Just gonna add in a little splash of this.
06:35Same way you would an extract.
06:39Feels like summer.
06:43Oh, I got you.
06:45I got your legs.
06:48You just smeared it.
06:50I don't know how much you can add
06:52and it still turn out whipped cream,
06:53but this is gonna take it over the top.
06:59Tasteless.
07:02I don't like coconut, but that's good.
07:04It's just enough.
07:04It's just a hint.
07:05So we're gonna put this on the top of the pie
07:07when it's done.
07:09Remember the rest of that condensed milk?
07:12How do you feel about coconut Brazilian lemonade?
07:16You've already got limes.
07:17We wanna wash these limes.
07:19I just let you off.
07:23Limes washed.
07:24Pie is done.
07:29Yeah, yeah, yeah, yeah.
07:30We wanna let it cool at room temperature
07:33for about 30 minutes to an hour
07:34and then we pop it in the fridge for a few more hours
07:37or until it's completely chilled and set up.
07:39Okay, so you wanna take your lime,
07:41cut off the ends just to remove some of that pith
07:45and then cut this into chunks straight into the blender
07:50along with some water, some coconut rum
07:54because we are geniuses.
07:58You didn't see nothing.
07:59And then some of our leftover.
08:03We don't waste anything around here.
08:05I'm gonna add in a little bit of ice
08:07and then just blend it up.
