Cooking Three Different Types of Rice with Mutton in the Village

One of the most important challenges in rural cooking is cooking in handmade and wood-fired ovens, which besides making cooking difficult, gives the food a good flavor and makes it tastier. Because of this, in many urban restaurants, smoking food and giving it the flavor of firewood is welcomed by people!
Today, we also cooked a traditional and delicious dish in a wood-burning oven using the smoking method, which is called Mahiche Polo; This dish has an easy yet special recipe that is very compatible with our people's food cravings!
To cook this unique dish, we combine rice with saffron and beetroot in a separate bowl and get three colors of delicious and beautiful rice.
Then we cook the muscle meat with bay leaves and some spices for a few hours until it is completely soft.
The sensitive and important point of this dish, which makes it delicious and distinctive, is cooking it for a long time in a wood-fired oven!
