00:12 I'm Laura, yeah.
00:13 And who've we got with you, Laura?
00:14 I've got my mum Jeanette.
00:16 So it's a family affair then?
00:17 It is, yeah.
00:18 So just fill us in then.
00:20 So ice cream business, how long have you been going and putting ice cream out into the Shropshire Hills? Go on.
00:26 We were established in December 2021, so we're just going into our third summer season since we started now.
00:33 And where can people find your ice cream then? Where are you selling it out of?
00:37 We've got our own ice cream parlour at Burberton, near our family farm where we have the milk farm to make the ice cream.
00:44 And we also have a trailer which you can find us at a lot of events across the county.
00:49 And also we stock probably around 20 wholesale businesses including Ludlow Farm Shop, Battlefield 1403, so covering a lot of the Shropshire Hills.
00:59 So who came up with the idea then to start in this game?
01:03 So that was my idea after going to university and studying food science and dairy.
01:10 And yeah, I just wanted to sort of, still involved on the family farm, so how to produce the milk and then make it into a special product.
01:18 So you make the ice cream here, you then distribute it out yourself.
01:23 And what's so nice about your ice cream? I can vouch I've tried a bit of the Raspberry Ripple, it was absolutely delicious.
01:30 Lovely creamy flavour to it, isn't that?
01:32 Yes.
01:33 And what sort of flavours are you doing then?
01:36 Well we try and stick to traditional flavours.
01:39 We do, yes.
01:40 So we can range from obviously your strawberry and your double chocolate, which is your traditional ones, up to mum's favourite which is rum and raisin.
01:48 Yeah, good to know.
01:49 Honeycomb is extremely popular.
01:51 But then we go seasonal, so you can have some marzipan stalling at Christmas.
01:55 Oh wow.
01:56 Or you can have some peach melbert or white chocolate and cherry in the summer.
01:59 So there's always lots of different ideas that we're thinking of.
02:02 And you were saying you've just recently done a, was it a white chocolate and something that was pretty very popular? What was that one?
02:09 White chocolate and amarena cherry.
02:11 Which we put on our ice cream parlour and I think we sold the tub in the weekends.
02:15 Oh wow.
02:16 Yeah, seems popular when it comes in.
02:18 I clocked the Baileys flavour, that's one I'm quite partial to myself.
02:23 And the Burwot and the parlour you've got there, it's actually, people probably know the pub The Boy in Arms, it's right next door isn't it to the...
02:32 Yeah, it's literally a little unit on the side of the car park, so just put in the car park and we go.
02:37 Outside seating, take home packs, have a milkshake made of our ice cream.
02:41 Ah, milkshakes as well.
02:43 Yeah.
02:44 Ah, great.
02:45 And so working, you know, it's family business, it can have its ups and downs.
02:49 Do you ever kind of argue about which flavour you're going to be doing next or...
02:53 We don't usually agree on flavours do we do?
02:56 No, we tend to have similar tastes, don't we?
02:58 Yeah.
02:59 Yeah.
03:00 No, we're a pretty good team on the whole.

03:03 So yours is a rum and raisin, what's your flavour of choice then Laura?
03:06 Raspberry Ripple, which you made today.
03:08 Ah, right, okay.
03:10 And where do you want the business to go then?
03:13 You know, if you had a magic wand, are you kind of at the level you want to be at?
03:16 Do you want to go bigger or...
03:18 We'd like to certainly grow, we'd like to see our parlour sort of become busier and become something, you know, a larger part of our business.
03:27 But no, we still want to take on new customers but we don't want to be big.
03:32 We do everything ourselves, we want to try and continue to, you know, provide a higher quality product with a good level of service that people keep, you know, coming back to.
03:40 So, yeah, you know, we just want to provide a good product.
03:46 Great, so if we're looking for the Raspberry Ripple for sure I've tried that one.
