00:00All right people, you spoke and I listened.
00:03You're always asking me for easy breakfast ideas
00:05and I've got that for you today
00:06in the form of three delicious casseroles.
00:09I'm gonna start with my newest development,
00:11the breakfast crunt trap casserole.
00:12In the Taco Bell version of their breakfast crunt trap,
00:15they have bacon in with their eggs.
00:18I'm doing sausage because you can stretch it further
00:21and so it's a little bit cheaper.
00:22So I cooked my sausage and I'm just gonna keep
00:24those drippings in the skillet.
00:26I'm gonna drain that.
00:27All right, now for the egg portion,
00:28I've got 10 eggs in here.
00:30I'm just gonna scramble them
00:31with just a little bit of water.
00:32I don't add milk, I just like water
00:33because it makes them, to me, extra fluffy.
00:36Season with a little salt and pepper.
00:39I'm using the same skillet I did to cook the sausage
00:42to cook the egg because it's all mixing together anyway.
00:44I'm just gonna melt in a tablespoon of butter.
00:47And the thing to remember here is that we're gonna cook
00:49our egg like super soft scramble
00:50because it's gonna finish cooking later in the casserole
00:53so you don't wanna overcook them.
00:54And the way to do that is to cook it over low
00:56and slow heat with constant stirring.
00:58This is one of those dishes in general
00:59that just looks harder than it is to make.
01:02So that's why you'll be just the hit of the next brunch.
01:05This is also a great meal prep option
01:07for like busy school mornings.
01:09When I developed this the other day,
01:11I cut it into a bunch of squares
01:13and brought it home, wrapped them up.
01:14It's great reheated, perfect for grab and go.
01:18All right, this is where you want them.
01:19See, they're like super creamy.
01:21So far we've cooked sausage and we've cooked eggs.
01:23You can do this.
01:24The Crunchwrap has this like creamy
01:26kind of salsa sauce in it.
01:28This is the way I'm making it.
01:29So it's about two parts sour cream to one part salsa.
01:32And then a couple tablespoons of diced pickled jalapenos.
01:36Some of this is going inside
01:37and then you wanna save some for the top
01:39because you're gonna want more.
01:39Just saying.
01:40Okay, now we build.
01:41All right, so I'm starting by brushing some butter
01:44liberally over the bottom of a nine by 13.
01:47This is gonna help make the outside really crispy.
01:49Then you take some large flour tortillas.
01:51You're gonna need five or six depending on the size
01:53of your casserole dish.
01:55And then you're gonna place your tortillas
01:57draping over the sides.
01:59Gonna form like a little package.
02:02So you're gonna put five around the outsides
02:05to look something like that.
02:07And then just some shredded cheese.
02:09This is gonna act as our glue throughout the whole casserole.
02:12So I'm gonna put some on the bottom
02:13which is actually gonna be the top
02:15after we finish the process.
02:17Our cooked sausage on top of our cheese.
02:20Okay, and then we're gonna put our eggs over the sausage.
02:24And now some of our sauce over the egg part.
02:27Okay, and then a little more cheese.
02:28In the lunch version, it's tostadas in the middle
02:31but in the breakfast version, the hash browns.
02:34You wanna cook these extra crispy
02:36because when they mix into here,
02:38you want them to stay really crunchy
02:40to keep that crunch wrap feel.
02:41You're just gonna layer them down.
02:44This is what makes it our crunch wrap.
02:46And then the remaining cheese to act as our glue
02:49to close it all up.
02:50Then you've got your final tortilla.
02:51You're gonna place that in the center
02:52and then fold over the ones that are hanging over
02:54to seal it up.
02:55And then you're gonna brush on the remaining butter
02:57and that's gonna seal it down.
02:59Oh, it's gonna be so good.
03:00This bakes at 375 degrees for just about 25 minutes
03:04or just until it's golden toasted all the way around.
03:07Just wait.
03:11You're about to have the most magical brunch ever.
03:14First things first.
03:17You can't call it a crunch wrap without the crunch.
03:20Now, when you're feeling brave,
03:23find what you wanna serve it on.
03:24Place her on top.
03:25Shot of courage.
03:26Grab both your serving platter and your casserole dish
03:30and give her a flip.
03:31The big reveal.
03:33Voila.
03:34This looks a lot more impressive than it is.
03:36Wait till you see the inside.
03:42Oh my gosh.
03:44Gotta get your garnish.
03:46To finish it off, I'm gonna top it
03:48with a little more of the sauce.
03:50Little sprinkle of some green onion.
03:52This is the casserole you eat with your hands.
03:57You know, it's all your typical ingredients
03:59in a breakfast casserole,
04:00but instead of having all that soggy bread on the inside,
04:02you get this crunchy toastiness on the outside.
04:05I gotta share the love.

04:34This McGriddle casserole is starting
04:35with complete pancake and waffle mix,
04:37where all you have to add is water.
04:39I do my best to keep the cost down.
04:41That took less than a minute.
04:43Like I said, this is a sweet and savory kind of casserole,
04:46so I'm gonna go in with the sweet,
04:47which is a little bit of maple syrup.
04:49Chop up my bacon.
04:51This recipe will work with just one pound
04:53of sausage or bacon.
04:55I just had some extra bacon,
04:56so I'm throwing it in for a little extra protein.
04:59Then a little bit of cheese, or a lot of it.
05:01Literally the epitome of easy.
05:03And I just love this,
05:04because my kids will take, you know,
05:06their pancakes and their sausage
05:09and wrap it up and dip it in the syrup.
05:10This just does it for them.
05:12I've made this before in muffins,
05:13which, by the way, you can do this same recipe
05:16and just divide it up into muffin tins
05:18and have little single-size servings,
05:19but this is a casserole episode.
05:21So that's it.
05:22This is gonna go into the oven, 350 degrees.

05:29My brain says I should wait to cut it.

05:36It's just like a big, fluffy pancake

05:42For my final trick, not only is this one easy,
05:45but it's also really fast, quick,
05:47and easy cinnamon roll casserole.

05:57This is gonna be a cross between bread pudding
06:00meets French toast casserole meets monkey bread.

06:06Don't toss out the icing.
06:08So we're gonna take our cinnamon roll dough
06:10and then just cube them up
06:11and place them into our casserole dish.
06:13This is kind of like our weekend breakfast,
06:15especially at the lake.
06:16Half a stick of butter.
06:18I'm gonna try to coat each one individually.
06:21It already smells good.
06:22Four eggs.
06:23We're gonna make a little custard to pour over it.
06:25Half a cup of heavy cream.
06:27A teaspoon of cinnamon and a teaspoon of vanilla.
06:34Okay, just pour it over and then I'm gonna top it off.
06:36Purely optional to add some chopped nuts.
06:39I'm doing some chopped pecans.
06:40And then just a drizzle of maple syrup
06:42and a sprinkle of brown sugar.
06:44This one bakes at 375 for about 20 to 25 minutes.
06:48That does not look like it started with canned cinnamon rolls.
06:51That is a casserole of perfect bites if you ask me.
06:54For the frosting, I'm gonna take that stuff
06:58that came with the cinnamon rolls.
07:00I'm just gonna add in a little sprinkle of cinnamon
07:03just so it kind of has those flecks.
07:05And then the drizzle.
07:07When the icing hits the casserole,
07:08the heat is gonna make the magic happen.
07:12Kind of impressed with this one.
07:13I also love this more than like a French toast casserole
07:16because it's like not custardy at all.
07:18You're really getting a cinnamon roll
07:20that you can just eat with your fork.
07:27You get the crunch from the pecan.
07:28Of course, you've got all the sweetness,
07:29but that toastiness on the outside with the soft inside.
07:33Y'all know what we call that.
07:35Perfect bite.

08:03So I'm gonna create the perfect brunch cocktail.
08:05I'm calling it Imadris Mimosa.
08:07Imadris is just vodka, cranberry, orange, right?
08:11First of all, if I do have a mimosa,
08:13it's just like a whisper of juice.
08:15This one's actually perfect for sipping.
08:16Don't tell me you don't put ice in a mimosa.
08:18I know, this is Imadris Mimosa.
08:20I'm combining the two.
08:21I say you start out with equal parts
08:23vodka, orange juice, cranberry.
08:24Give it a stir.
08:26That's the color.
08:27And then top it off with your bubbles.
08:31Cheers.
08:35That is so much better than a mimosa.
