We speak to world renowned chef Michel Roux about his new restaurant at the Langham hotel, opening on May 22nd.

He tells us about the menu, the cuisine that inspired him and who he is supporting this summer.

00:00 Michel Roux is opening a new restaurant, Chez Roux, at the Langham Hotel in London on May
00:06 22nd, serving French and British cuisine.
00:09 But which is his favourite and who is he supporting in the Euros?
00:13 So Chez Roux is opening very very soon in the Palm Court at the Langham.
00:18 Really exciting, a great menu inspired on my childhood, food that I was brought up on
00:25 and the very very first menus of Le Gavroche.
00:28 So some of my favourites are the oeuf en gelu for example which is a poached egg, soft
00:32 poached egg, encased in a beef tea or a beef consommé.
00:37 So that's really a step back in time.
00:39 But we've also got a Welsh rarebit with some pickled walnut ketchup, a roast lobster with
00:44 garlic butter, so things like that.
00:46 The menu is a mixture of great British classics that have got a little French touch to them
00:51 and some great French classics of course because that's what I was brought up on.
00:55 Do you prefer French cuisine over British cuisine?
00:58 Obviously I love French cuisine, that's what I was brought up on and that's what I love
01:02 cooking.
01:03 However, England now has a great food identity and based on some of the great classics.
01:11 But it is beautiful and I love eating them and cooking them.
01:14 And obviously you're French, going into the Euros as well, do you have a kind of favourite
01:21 going into them at all?
01:22 Going into the Euros, well I'm win-win, France and England.
01:26 Amazing, I know you've got a restaurant in London, how excited are you to just be in
01:34 London and have a restaurant here?
01:36 What does it mean to you to be at the Langham as well?
01:39 I really consider myself as a Londoner.
01:41 I was brought up here and I just love it, I love the buzz, the atmosphere, the creativity,
01:49 it's electric.
