00:03 I love a baked brie, but I'm obsessed with this baked feta.
00:08 It is crispy on the outside, it is super soft and creamy in the center,
00:12 and with honey drizzled over the top and some toasted sesames,
00:16 it is one of my favorite party acts.
00:18 This recipe is super simple.
00:20 It uses just a couple of ingredients, one of which is the store-bought phyllo.
00:24 Before we can make our pockets, we need to make sure that we take
00:27 as much moisture out of the feta as possible.
00:30 Because if there's too much moisture inside the feta when we roll it up,
00:34 it might burst and explode all over the oven, and nobody wants that.
00:38 Not a cute look.
00:39 So, to do this, we are going to put the feta right in the center
00:44 of the roll of paper towels, and wrap it up,
00:49 put it on a clean sheet tray like this,
00:53 and put something heavy on top.
00:56 And you're going to leave that there for 30 to 60 minutes.
00:59 We're going to wrap our feta today in phyllo.
01:02 If you haven't cooked with phyllo before, you've definitely eaten it.
01:06 It's like that iconic flaky layered dough that features in baklava,
01:10 spanakopita, and a lot of other Greek and Turkish pastries.
01:14 This is one of those doughs that you definitely don't want to try to make from scratch.
01:18 The stuff that you buy at the store is made by machine.
01:21 It is super thin, and you'll just never get it that thin if you do it by hand.
01:25 We're going to lay two of these sheets of phyllo right on top of each other on our work surface,
01:30 and then we're going to sprinkle with thyme and lemon zest.
01:33 Then we're going to place the feta on one end of the phyllo,
01:37 and roll it up like a burrito.
01:39 Once you get to the end of the roll, you're going to brush a little olive oil on the edge to seal the pocket.
01:44 Before we put this pocket in the oven,
01:46 we're actually going to sear it first to get a really crispy golden brown color on it.
01:51 It's going to help with the browning and make it look that much more appetizing.
01:55 It's also going to add some great flavor.
01:57 So to the pan, we're going to go in with some olive oil,
02:03 and heat that over medium-high until it is super shimmery.
02:07 We're going to sear this on all sides until it's golden brown, about two to three minutes.
02:12 We're going to bake this at 350 for 10 minutes, just until it's soft and creamy in the middle.
02:17 Once it's baked, we're going to cut it into pieces, drizzle it with honey,
02:22 and top it with some toasted sesame seeds, some fresh thyme, and some crushed red pepper.

02:31 You've got that crispy phyllo, and that soft, creamy cheese in the middle,
02:36 and the honey and the sesame just amp up the flavor.

02:45 You get that salty, creamy feta, and the sweetness of the honey,
02:49 and that rich nuttiness from the sesame seeds plays so nicely with the thyme and the red pepper flakes.
02:57 Honey and phyllo dough as a combo are a tried-and-true match.
