वेज पनीर दम बिर्यानी । मासालेदार (मैरिनेटेड) पनीर क्यूब्स और लम्बे चावल और कुछ खड़े मसालों के साथ बनाई गई एक आसान और सरल दम स्टाइल पकी बिर्यानी रेसिपी है। यह नॉनवेज न खाने वालों के लिए या पनीर प्रेमियों के लिए एक आदर्श शाकाहारी बिर्यानी विकल्प है। यह रेसिपी बनाने में आसान है और दोपहर के लंच बॉक्स या लेट-नाइट वीकेंड डिनर के लिए आसानी से परोसी जा सकती है।

ingredients:

Paneer (cut into cubes) - 200 gms
Red Chilli Powder - ¼ tsp
Turmeric Powder - ¼ tsp
Cumin Seeds Powder - ¼ tsp
Salt (as per taste)
Oil - 1 tbsp
Oil - 3 tbsp
Ghee - 1 tbsp
Bay Leaf - 1
Cinnamon Stick - 1-inch
Black Cardamom - 1
Green Cardamoms - 2
Cloves - 2
Black Peppercorns - 4 - 5
Cumin Seeds - 1 tbsp
Onions (sliced) - 2
Ginger-Garlic Paste - 1 tsp
Kashmiri Red Chilli Powder - 2 tsp
Turmeric Powder - ½ tsp
Coriander Seeds Powder - 1 tsp
Cumin Seeds Powder - 1 tsp
Biryani Masala Powder - 2 tsp
Green Chilli - 1
Coriander Leaves - ¼ cup
Water (as required)
Tomatoes 3 - (puréed)
Curd (whipped) - ¼ cup
Salt (as per taste)
Basmati Rice (parboiled) - 2 cups
Fried Onions (as required)
Saffron infused Milk (as required)
Water (as required)
Coriander Leaves (as required)

00:00When we hear the name biryani, we get tears in our eyes, right?
00:05And we also feel that making biryani is very difficult.
00:08But it's not like that at all.
00:10I am Chef Nikki, today I am going to teach you a very easy way to make Paneer Dum Biryani.
00:15Let's start.
00:21For Paneer Dum Biryani, I have cut 200 grams of Paneer into pieces.
00:26Now we will add some Red Chilli Powder, some Turmeric Powder, some Cumin Powder.
00:36And lastly, we will add some Salt.
00:39We will mix the Paneer well with the spices.
00:45Now in a small pan, we will take some Oil.
00:48Now we will fry the Paneer pieces till they turn golden brown.
00:56Paneer has turned slightly brown, now we will remove it.
01:14Now in a pan, we will take 3 tbsp Oil.
01:17Along with that, we will add 1 tbsp Ghee.
01:20Now we will add the whole spices to it.
01:22First, we will add 1 Bay Leaf.
01:24We will add 1 Cinnamon Stick.
01:27We will add 1 Black Cardamom.
01:292 Green Cardamoms.
01:32Now we will add 2 Cloves.
01:34And along with that, we will add 4-5 Black Peppers.
01:37Now we will add 1 tsp Cumin Seeds.
01:40We will roast it a little.
01:43I have taken 2 Big Onions, I have cut them lengthwise.
01:48We will cook the Onions till they turn golden brown.
01:54The Onions have turned golden brown, you can see.
01:57Now we will add the spices to it.
01:59First, we will add Ginger-Garlic Paste.
02:022 tsp Kashmiri Red Chilli Powder.
02:04We will add some Turmeric Powder.
02:061 tsp Coriander Powder.
02:081 tsp Roasted Cumin Powder.
02:102 tsp Biryani Masala.
02:121 long chopped Green Chilli.
02:16And along with that, we will add Coriander Leaves.
02:18You can also add Mint Leaves to it.
02:21We will mix the spices well.
02:24Now we will add some water to it, so that the spices don't burn.
02:34I have ground 3 Tomatoes, we will add that.
02:39Now we will mix all the ingredients very well.
02:43Now we will add 1 cup Curd.
02:48You can also use Cream instead of Curd.
02:52Now we will sauté all the spices along with the Curd.
02:58Lastly, we will add Salt as per taste.
03:08We will mix it well with the Paneer.
03:13Mix it well.
03:19Now we will add Rice to it.
03:23I have taken Basmati Rice here.
03:25I had soaked 1 cup Basmati Rice for half an hour.
03:28And I had boiled it in water.
03:30While boiling it in water, I had added 1 Bay Leaf and 1 Cinnamon Stick.
03:36I had cooked the Rice half.
03:38We don't have to cook it fully, otherwise the Rice will get cooked while making the Biryani.
03:43Now we will add Bay Leaf to it.
03:49We will sprinkle some Garam Masala.
03:53We will add Saffron, which I had soaked in milk for 2 hours.
03:58You can also add Rose Water instead of Saffron.
04:01And if you have Kewra Water, you can add that as well.
04:05This gives a very good flavour to the Biryani.
04:07Now we will add some water to it.
04:10Not too much.
04:11Lastly, we will add some Coriander Leaves.
04:16I have taken Wheat Flour.
04:17We will roll it like this.
04:19Now we will stick the Wheat Flour on the lid.
04:26Now we will close it.
04:30And we will leave the Biryani to cook for 10 minutes on a low flame.
04:37Now we will serve it.
