00:17 But staying healthy during this time can sometimes be tricky, but we are lucky enough to have
00:22 dietitian Kristen Carley here to give us some healthy eating tips for the upcoming holiday.

00:28 Thank you so much for having me.
00:29 I'm excited to be here in partnership with Libby's Vegetables.
00:33 I cannot believe Easter is this Sunday.
00:35 I know.
00:36 It flew, this year is just flying by, but I love when you're here because you really
00:40 inspire me to find those little ways to sneak kind of healthy things into my diet while
00:47 not feeling like I'm giving anything up.
00:48 100%.
00:49 And that's what I love about canned vegetables because they really are a great way to add
00:53 convenient nutrition to food.
00:55 I'm a busy mom.
00:56 You're a busy mom.
00:57 And I'm going to look for those shortcuts whenever I have them and canned veggies are
01:00 the way to do that.
01:01 Okay, so let's talk a little bit about what we have on the table.
01:03 Okay, so this is a beet hummus.
01:06 I've paired it with some carrots, some cucumbers, some pita bread.
01:09 What I love about beets is that beautiful, vibrant color.
01:12 Definitely.
01:13 But here's the thing, I am never going to use a raw beet.
01:16 I just won't do it.
01:17 I'm not going to peel it.
01:18 I'm not going to steam it.
01:19 It takes way too long.
01:20 And let me just say, I recently tried to do fresh beets and my hands were dyed red.
01:26 It was not good.
01:27 This is where canned beets can really come into play because they're cooked, they're
01:31 peeled, they're fork tender, they're just ready to go.
01:34 What I love is that just in a can you've got water, vegetables, and salt in Libby's vegetables.
01:40 So it really is just simple, short ingredient list, really convenient nutrition.
01:45 Definitely.
01:46 I think a lot of us think there's more going on in the can, but it really is just that.
01:50 You were already going to add the salt and the water anyways.
01:53 That's all that's in there.
01:54 That's great.
01:55 It's a great time-saving hack.
01:56 So in that hummus, I've got some beets, some chickpeas, some walnuts, some lemon juice
02:00 and garlic.
02:01 So really flavorful.
02:02 I've topped it with some gorgonzola cheese.
02:04 It's a great way to add some color to your Easter tablescape.
02:08 And if you're hosting, this looks gorgeous.
02:10 This color is delicious.
02:12 The food looks incredible and fresh.
02:14 I love this.
02:15 This would be beautiful to have guests come in on your Easter celebration.
02:18 Showstopper, for sure.
02:19 Definitely.
02:20 Definitely.
02:21 It's beautiful.
02:22 And you're going to love this one because you're Italian.
02:23 I'm Italian as well.
02:24 I grew up eating biscotti.
02:26 This is a carrot cake biscotti.
02:28 So we're using those flavors that are very typical from Easter and springtime.
02:33 And I drizzled some white chocolate on there.
02:36 And we use some canned sliced carrots.
02:39 Wow.
02:40 Okay.
02:41 Canned sliced carrots in a carrot cake biscotti.
02:45 You got it.
02:46 Yes.
02:47 I love this.
02:48 This sounds incredible.
02:49 Okay.
02:50 Walk me through how you made this.
02:51 So what I really like about using cans here is, again, I would have to peel the carrots.
02:52 I would have to steam the carrots.
02:54 I don't have that kind of time.
02:55 So what I do is I just drain a can of the carrots.
02:58 They're already cooked.
02:59 You end up mashing the carrots into the batter.
03:01 So we like that fork tender texture.
03:04 So it's perfect for these.
03:06 Saves you that time.
03:07 You don't have to do all the prep work.
03:09 They're ready to go.
03:10 Especially because I'm assuming a biscotti is a little bit more of, you know, yeah, an
03:16 involved recipe.
03:17 So you want this to be something easy that you can just throw in there and go.
03:21 Yeah.
03:22 Perfect.
03:23 And I love this dessert because it is a celebration.
03:24 So this is a perfect one to add to your table.
03:27 This is great.
03:28 And this would also be great because it is Easter.
03:30 A lot of people are doing brunch.
03:32 Yes.
03:33 So this will be great as a little dessert with your coffee.
03:35 I love it.
03:36 100%.
03:37 Delicious.
03:38 And then lastly over here, we've got this beautiful crostini.
03:40 So you can have a little appetizer for your brunch spread.
03:44 Beautiful.
03:45 We've got baguette with a lemon and mint ricotta.
03:47 I mix that together.
03:49 And then I've got some peas with Parmesan.
03:52 Super bright flavors, seasonal.
03:54 We love peas for the springtime recipes.
03:58 This is a perfect one to add to your table.
03:59 Okay.
04:00 So I was saying before, I'm not the biggest fan of peas, but this sounds like it's going
04:06 to be a great recipe because you're getting in those veggies.
04:09 You're kind of sneaking them in.
04:12 100%.
04:13 Anything with cheese, right?
04:14 That helps.
04:15 I was going to say the cheese, the lemon, the mint, all of those other flavors are going
04:18 to enhance, but kind of like allow your palate to enjoy the flavors altogether rather than
04:27 just having such a strong pea flavor.
04:29 Exactly.
04:30 Absolutely.
04:31 That's great.
04:32 So this is beautiful because any one of these dishes are going to look like a showstopper
04:37 on your Easter table.
04:38 So this is beautiful.
