00:20 And the reason they're so fantastic
00:22 is 'cause we're using the most authentic spice mix
00:24 that we can come by.
00:25 So you've got the likes of clove and nutmeg and cinnamon,
00:28 we've got green cardamom, my favourite.
00:30 There's also a little spice in there,
00:32 if you can call it a spice,
00:34 that's actually a bit of an outlier.
00:35 And I found it in some particular shawarma recipes
00:39 from Lebanon and we use that as well.
00:40 And I think that's given it that really authentic taste.
00:43 Another thing that's particularly popular
00:46 is the Lebanese garlic sauce here.
00:47 It's an absolute occasion of lemon juice and oil and salt,
00:50 but this, this is what's really important at SKU.
