Aside from the heritage houses, Bacolod is well known for its chicken inasal. We take a look at the kitchen of Aida's, one of the carinderia at Manokan Country near SM City Bacolod, and find out why they have some of the best and most savory chicken inasal.

00:27 And Manokan Country has several stalls which serve this exact dish, karenderya style.

00:33 Ides in Manokan Country is arguably one of the most popular spots here in Bacolod.
00:38 So much so that the big chicken statue in front is a landmark in itself.

00:45 The atmosphere feels like a festival every day.

00:54 But of course, the main attraction is the famous chicken in a cell.

01:00 I'm Cecil Pangan, manager of Ides Chicken in Manokan Country.
01:06 Ides started in the quadra, the rolling store.
01:11 Then it moved here in the 1980s.
01:15 Manokan Country was built here, that's why we're here.
01:21 We're still building it because it's the government's.

01:29 I can't overstate just how iconic the chicken in a cell of Bacolod is.
01:33 And for good reason.
01:34 [Music]
01:43 Our chicken is different because of its juiciness,
01:46 the way it's cooked, the way it's grilled.
01:49 We put chicken oil in it so that the color of the chicken becomes golden and tasty.

02:11 This dish is usually eaten with garlic rice and dipped in soy sauce with calamansi and chili if you want a little bit of kick.
