Ahead of the Paris Olympics next summer, chefs are preparing a host of dishes, many of them plant-based, to serve up to athletes and support staff at the Olympic Village.

00:14 dishes to keep athletes in top shape and satisfy their appetite.
00:18 The Paris Olympics will run for two weeks next year starting in July, with the Paralympic

00:25 And chefs will have their work cut out for them, but they're pulling all the stops.
00:29 "15,000 athletes, 40,000 meals a day, all for 206 delegations.
00:34 It's a real culinary challenge, a real logistical challenge.
00:41 Our goal is to participate in the performance of the athletes."
00:50 France is well known for its cuisine, which chefs will be sure to represent on the dinner
00:55 table.
00:56 But they also want to make sure there's something that suits athletes' diverse tastes.
01:01 Each dish will be judged by the Olympics organizing committee, as well as the athletes themselves.
01:06 They can leave comments on a survey to help chefs develop the dish.
01:10 "We scan the QR code with a questionnaire, we note the visual, the taste, and the overall
01:18 recipe.
01:19 We also make more precise comments.
01:20 Then we'll receive a report where we'll see what's been taken into account, but it goes
01:23 even further than just the food.
01:26 We're interested in how the allergies are presented, the dishes in which it's served,
01:30 because there's also the accessibility aspect that we don't forget to take into account,
01:33 whether it's for the Olympic or Paralympic period."
01:39 Next year's Olympic menu will emphasize vegetarian options, while keeping in mind athletes'
01:44 nutritional needs.
01:45 The chefs say a third of the protein served will come from vegetables.
01:49 "Some athletes who are more muscular will need a little more protein than other disciplines
01:57 where it's really small amounts.
01:59 So as soon as we have a buffet that's very diverse, everyone will be able to adapt their
02:07 meals to their needs."
02:10 And with over 500 dishes to choose from, athletes will surely be able to find something to suit
02:15 their palate in Paris, and fuel world-class performances.
