00:57 And this dish is actually very similar to our chicken caldereta or chicken afritada.
01:03 But again, the reason why I'm cooking these specific dishes is to introduce to you different
01:09 flavors with a very familiar taste.
01:14 We'll just lightly season it with salt and pepper.
01:19 It's smoking, it's smoking.
01:20 Okay, ready.
01:21 Let's give our chicken a nice sear now.
01:27 We want our chicken skin to be this color.
01:31 As you can see, it's already golden brown.
01:34 We'll let this cook for about 3 to 5 more minutes on the other side and then we'll do
01:38 the rest and we'll be back once we place all of the vegetables in.

01:48 So let's set that aside but in the meantime, let's get on with sautéing our vegetables.
01:53 So onions go in first.
01:57 Sauté this for around 2 to 3 minutes.
02:01 A lot are asking, what should go first, the onions or the garlic?
02:07 Usually for most Filipino dishes, we put the garlic first so we can get the toasted
02:13 flavor of the garlic.
02:14 But in this case, we want to enhance the sweetness of the onions.
02:21 As you can see, the onions are translucent.
02:24 At this point, you can add in your garlic.
02:28 We'll cook this for around 2 to 3 minutes again.
02:31 While the garlic is cooking, add in some tomato paste.
02:37 We want to bring out the natural sweetness of the tomato paste.
02:43 So when you smell it and it's already sweet, you know it's ready.
02:47 The raw flavor of the tomato paste is already cooked.
02:50 Next we can go in with our peppers and mushrooms.
02:55 As I said earlier, this is a one-pot dish.
02:58 Especially when you're cooking for a big batch of people.
03:01 Now, it's not good.
03:02 It's good because there's less mess.
03:05 You can do this when you cook dishes like this.
03:11 We can add in our herbs.
03:14 We go in with some thyme.
03:16 Maybe just a little bit to add flavor.
03:20 And then go in with some oregano.
03:24 So maybe when we add these spices, our chicken caldereta changes.
03:34 But like I said, it still has a similar flavor.
03:36 It's still a tomato-based stew.
03:40 And then we can also add in a couple of sprigs of rosemary.
03:44 So we can just keep this whole.
03:45 We'll remove it later.
03:48 So usually what they do with chicken cacciatore, they add in olives.
03:53 Let's add a little bit of olives.
03:56 Then, personally I like the flavor profile of capers.
04:00 Because it adds a nice tartness.
04:02 I would say it has a little bit of sourness.
04:05 So it adds to the complexity of the whole dish.
04:08 So let's add a little bit.
04:13 You can see here in the pan, there are sediments that are stuck to the bottom.
04:18 So at this point, we can deglaze it with some white wine.
04:23 We're gonna need about, let's say, one cup.
04:33 So to make our sauce even more flavorful, we'll be adding some chicken stock.
04:37 So chicken stock is chicken broth.
04:39 You can also use chicken cubes or chicken powder.
04:42 Then we're also gonna be adding some tomato puree or tomato sauce.
04:51 So this is it.
04:52 Basically, this is our sauce.
04:54 And let's season it with salt and pepper.
04:57 And also add in some freshly cracked black pepper.
05:01 You can also use normal black pepper.
05:03 You don't need to use freshly cracked.
05:07 It will smell better.
05:11 Let this simmer along with your chicken pieces.
05:14 So we're gonna put our chicken back here.
05:18 Now that all of our chicken pieces are beautifully seared, let's put it back in the sauce.
05:25 So the sauce and the chicken can absorb all of the good flavor that we've built up here.
05:33 So now, we will allow this to simmer for around 20 to 30 minutes or until the chicken is nice
05:42 and tender.
05:46 Now 20 minutes have finally passed and our Chicken Cacciatore is ready.

05:53 The sauce has thickened up very nicely and the chicken has already absorbed all the flavor
06:02 of the sauce.
06:03 And so has the sauce absorbed all the flavor of the chicken.
06:06 This looks good so let's get to plating.
06:12 Okay, now let's give our creation a try.
