Ingredients:
2 Tbsp Oil
1/4 Cup Coriander Seeds
1/4 Cup Desiccated Coconut
2 Tbsp Oil
6-8 Green Chillies
1/4 Cup Onion (diced)
5 Garlic Cloves
1 Inch Ginger (sliced)
1 Tbsp Fennel Seeds
10-15 Black Peppercorns
3 Cloves
2-3 Tbsp Ghee
2 Onions (chopped)
1 Tomato (chopped)
250 Gms Mutton
1/4 Tsp Turmeric Powder
Salt (as per taste)
Dry Fenugreek Leaves
Water (as required)
2 Green Chillies (Sliced)
Coriander Leaves(chopped)
1 Tbsp Cream

00:02 This is your Punjabi chef Prateek Dhawan.
00:04 Not just any Dhawan, today I'm Dhawan.
00:06 Who's going to prepare a delicious Mutton recipe called Green Chilli Mutton Korma.
00:10 So let's start cooking.
00:12 So to begin with, first I'll take a pan.
00:23 Heat it up.
00:25 Now add 2 tbsp Oil.
00:28 Now add 2 tbsp Oil.
00:30 The oil is hot.
00:33 To that, I'm going to add Coriander seeds.
00:36 And cook till the colour changes and the aroma is released.
00:40 The colour has changed.
00:45 Now I'm going to switch off the gas.
00:46 Transfer the coriander into a jar.
00:48 To this, I'm going to add desiccated coconut.
00:54 Close it with a lid and grind it into a nice paste.
00:57 Our coriander paste is ready.
00:59 Let's move on to green chilli paste.
01:00 For that, first I'm going to again take Oil.
01:02 As the oil is hot, I'll put the green chillies for frying.
01:06 Fry them till 1 minute and then I'll remove it.
01:09 After frying chilli for 1 minute, I'll pass it into a grinding jar.
01:14 To that, I'm going to add roughly cut Onion.
01:17 Clove of Garlic, 5.
01:22 Sliced Ginger.
01:25 Fennel seeds.
01:26 And Peppercorn.
01:30 And last, Cloves.
01:33 And now I'll grind it into a nice fine paste and we'll start making the Mutton Korma.
01:38 Our green chilli paste is also ready.
01:41 Let's start preparing our Korma.
01:42 For that, I'm going to switch on the gas.
01:44 Add Ghee.
01:46 And wait for it to heat up.
01:48 To that, I'm going to add chopped Onion.
01:53 And cook till the Onion is translucent in colour.
01:55 As the colour of the Onion starts to change, to that I'm going to add the green chilli paste.
02:04 Cook it for a minute.
02:10 And after cooking the green chilli paste for a minute, I'm going to add Tomato.
02:19 And cook till they are soft and mushy.

02:25 The Tomatoes have gone soft.
02:36 So now, to that I'm going to add the Coriander paste.
02:39 And cook it for at least 1-2 minutes.
02:49 After cooking the Coriander paste for 2 minutes, now I'm going to add the Mutton.
02:52 And with Mutton, I'm going to add Turmeric powder.
02:56 Salt.
03:02 And Kasuri Methi.
03:05 Now saute for a few minutes.
03:08 Till the Mutton starts browning.
03:17 Cook the Mutton on low flame for at least 5-6 minutes till the colour changes to brown.
03:20 And then we'll add water and cover the Mutton and cook for at least 30 minutes.
03:24 I'm going to add sliced Chilli.
03:38 Fresh Coriander leaves.
03:41 Now I'm going to finish it with some Cream.
