She shows us how to make sweet potato hummus, Greek-loaded sweet potato fries, sweet potato crostinis, and cranberry pecan roasted hasselback sweet potatoes. 00:10 I hope we make this a weekly thing.

00:12 We need to make this a weekly thing because we gotta stay on our health plans.
00:17 It's so important as we get older and as we are back to busyness at school and everything
00:21 like that.
00:22 Absolutely.
00:23 There's one item that some people do not know how to make great dishes with and that's
00:28 a sweet potato.
00:29 Yes, it is.
00:30 I think you're meant to make a sweet potato pie or sweet potato fries.
00:33 Exactly.
00:34 That's all you do.
00:35 Right.
00:36 Well, sweet potatoes are great and as a part of national fruits and veggies month, I'm
00:40 here again in partnership with Have a Plant and Baco Sweet.
00:43 We are talking about ways every time you celebrate how to have a plant.
00:47 So I'm gonna talk to you about ways to incorporate some sweet potatoes.
00:50 So I've got a bunch of different things here.
00:53 We've got some sweet potato hummus over there.
00:55 Have you ever had sweet potato hummus?
00:57 I know I have it.
00:58 Do you want to give it a shot?
00:59 Yeah.
01:00 Are those cucumbers?
01:01 Yeah, those are cucumbers.
01:02 Alright.
01:03 So this has some chickpeas, tahini, all the normal ingredients that you put in hummus,
01:06 but then also a steamed sweet potato.
01:08 Just as a way to kind of increase the plant in your, whatever you're offering.
01:12 Oh my gosh.
01:13 So I would serve this at like a football game or any sort of casual gathering.
01:19 Really delicious.
01:20 You gotta leave that.
01:21 Leave it.
01:22 Don't go anywhere.
01:23 How'd you make that?
01:24 So super easy in the food processor.
01:25 Put garlic, tahini, chickpeas, a steamed sweet potato, salt and pepper, lemon juice, blend
01:30 it all up.
01:31 How long should you steam the sweet potato?
01:32 So bako sweet potatoes are actually really awesome.
01:35 They sell these single sweets.
01:36 They're all the same size.
01:38 You can microwave them for about five minutes.
01:40 Just make sure you poke it first.
01:41 Okay.
01:42 Alright.
01:43 What do we got here?
01:44 We've got some Greek loaded sweet potato fries here.
01:45 So this is sweet potato fries, but elevated.
01:48 So I've got some tzatziki, some cherry tomatoes, kalamata olives, some cucumbers.
01:53 I've got some feta cheese.
01:55 So all the good stuff there.
01:56 Again, probably something that I'd serve at more of a casual gathering.
01:59 Yeah.
02:00 Again, remind me what sweet potatoes are for in your diet.
02:03 So they're incredibly high in potassium, vitamin A and fiber.
02:07 They actually are too a certified heart healthy food.
02:10 So really good for your heart health.
02:12 And people think, well, it has sweets in it.
02:13 That's why.
02:14 But no, that's not really the reason why they call them sweet potatoes, right?
02:17 Exactly.
02:18 Yeah.
02:19 It's actually filled with fiber.
02:20 So that's why I love serving it as a heart healthy food.
02:21 Okay.
02:22 So what do we have here?
02:23 So this would be more for an elegant gathering.
02:26 You've got some sweet potato crostinis here served with a little mashed avocado and some
02:29 of those pomegranate arils.
02:31 You want to try this one?
02:32 Yeah, because it looks like Christmas almost.
02:35 Yeah.
02:36 Very festive.
02:37 So how'd you make these?
02:38 So I sliced these up into about a quarter inch rounds and then baked them off and topped
02:42 them with our toppings.
02:44 Really good, right?
02:45 Oh my gosh.
02:46 Just a great substitute for bread if you want to add another plant to your table.
02:49 Oh my gosh, that's so good.
02:51 Really good.
02:52 Oh my gosh, that's so good.
02:53 I'm glad.
02:54 And lastly over here.

02:56 I'm glad you like it.
02:57 Whenever I force you to eat food, I never know.
02:58 I'm like, is he going to like it?

03:01 Absolutely sure.

03:04 And then this would be more on your holiday table.
03:09 So we've got some sweet potato cut in like Hasselback style with some brown sugar, melted
03:14 butter, pecans, and dried cranberries to add even more plants.
03:18 I like that.
03:19 I just learned a new word for these type of, it's called Hasselback?
03:22 Hasselback, these.
03:23 Yeah.
03:24 When they're cut like this.
03:25 Are these Hasselback cut too?
03:26 No, those would be Cristini.
03:28 So when they're cut like this and then laid in a tray, like all lined up, yeah, Hasselback.
03:32 There you go.
03:33 I'm learning new stuff about a lot of nutrition.
03:34 This is so good.
