Mexican chef Elias Silva Resinas shows us how to make the perfect tortillas for making tacos with!

00:01 I'm the head chef of Vellacanta,
00:02 and today I'm gonna show you how to make tortillas.
00:05 We're gonna start making the tortillas.
00:09 So to make the tortillas, we need to mix corn flour.
00:13 This kind of corn flour you can find in any store here.
00:17 Just gonna add a little of that,
00:18 and a little bit of warm water, just a tiny bit.
00:22 And we're gonna mix all this,
00:25 that is gonna turn out into a masa.
00:27 Masa in Mexico, we use it for everything.
00:29 We use masa to make tamales, tortillas for the tacos.
00:33 It's the primarily ingredient in Mexican food.
00:37 So we're just gonna mix all this.
00:39 Just mix it with your hands.
00:41 We're looking to get a kind of like a dry dough,
00:47 a dry masa, I would call it in Mexico.
00:50 Just mix it super well.
00:52 That's it, once you get a kind of like a dry masa
00:57 that it doesn't stick in your hand,
00:59 it will be ready to go.
01:01 So get a wet towel, just put it on top of your masa
01:05 while you turn on the pan for the tortillas
01:08 so the masa doesn't get dry and then they're gonna break.
01:11 Once the masa is ready, just start making small balls.
01:16 So you can press them after to make the tortillas.
01:19 Just make sure whenever you're rolling
01:21 to make the small balls, put kind of pressure
01:23 so the tortillas, they're nice and tight.
01:26 Just put it back straight in the same bowl
01:28 as you keep making them.
01:30 Just gonna use them right after now.
01:33 Just make small balls.
01:35 It depends how big you want your tortillas.
01:37 If you want them big, make quite a big balls.
01:39 If you want small, just make tiny balls.
01:42 I would recommend you about like 15 grams
01:45 for a piece of tortilla.
01:46 Remember, tortilla is just corn and water,
01:49 so they're gluten-free.
01:50 You're prepared for every occasion.
01:52 You can make tacos, you can make quesadillas,
01:55 you can make millions of things.
01:58 We're gonna start pressing the tortillas.
02:01 If you don't have a press, you can just get a rolling pan,
02:04 some paper, roll it, and then just cut it
02:06 with a cookie cutter.
02:08 Depends the size of the tortilla that you're looking for.
02:11 Just get plastic bag, like a sandwich bag.
02:15 Just cut it off, divide it in two.
02:16 Get one of your bowls.
02:20 Just put it right in the center, press a little bit.

02:26 Just press tiny bit, fold it back again.
02:29 Press again.
02:32 Next step, let's turn on the pan, medium-high heat.
02:50 And we're just gonna press the tortillas,
02:52 put them there, 30 seconds on one side,
02:55 about 45 seconds on the other,
02:56 and then just finish it for 10 seconds.
02:58 There's a saying in Mexico that if your tortilla pop,
03:01 you're ready to get married.
03:03 Make sure you have a towel,
03:06 where you can keep them warm at all the time.
03:09 So here you have your tortillas, ready to go.
03:13 You can make tacos, you can make quesadillas,
03:15 you can make everything, put everything you want on top.
03:18 The whole process to make the tortillas,
03:21 for about four people, it will take about 20 minutes.

03:28 I wouldn't freeze the tortillas,
