In this video, Nicole shows you how to make baked chicken taquitos with rotisserie chicken. This cost-efficient recipe can make a dozen taquitos for under ten dollars, or less using leftovers. Using shredded rotisserie chicken tossed with cheddar cheese, hot sauce, and seasoning, roll the ingredients in a corn tortilla. Place the taquitos on a lightly greased pan and bake them for around thirty minutes. Whether they’re served for dinner or as a party appetizer, these taquitos are a quick-and-easy dish!

00:00 Taquito Tuesday, not Taco Tuesday, is my kids' favorite day in the cafeteria.
00:05 So I'm whipping up a big batch because something like this is just good to have on hand.
00:09 Now these are not your typical classic taquitos because these are not deep fried.
00:13 We are going to bake these and what's great about that is that you can make a lot at one time.
00:17 You can do this with any sort of leftover meat you have.
00:19 This is just kind of simply seasoned so I'm gonna add in a little bit of flavor to mine
00:23 with a little bit of garlic powder, a little bit of salt, a little bit of chili powder,
00:29 and some hot sauce.
00:30 And then add in some cheese. I'm going in with just cheddar.
00:33 This is the kind of thing you make when you've got a fridge of leftovers and you don't know what to make.

00:47 To make your corn tortillas a little more pliable, you want to heat them up.
00:52 I just love to wrap them in a slightly damp paper towel and put them in the microwave.
00:55 That just kind of steams them and makes them easy to roll.
00:59 Then you're going to place them seam side down on our pan that I've lightly greased.
01:04 I did learn that the fresher your tortillas, the better and the less likely they are to crack.
01:10 So you can get corn tortillas obviously everywhere, but if you have a Latin market near you where
01:14 they make fresh tortillas, that's the way to go and they're still super cheap.
01:19 You can easily make a big batch of these, at least a couple dozen,
01:23 for less than 10 bucks. Or if you happen to use all leftovers, which is the best way to make this
01:29 recipe, then you could probably make this for less than two bucks. I'm going to give them just a light
01:33 coating on the tops just to help them get a little extra crispy. You could also just spray them with
01:39 some cooking spray if you want. These go in at 350 degrees for about 20 to 30 minutes, depending on
01:44 how crispy you like them. The longer they stay in, the crispier they'll get. If you have a convection
01:48 setting on your oven, this is a great time to use it. But they smell so good and just wait,
01:55 you won't be able to tell they weren't fried.
01:57 Yeah, they'll even get a little crispier as they sit. Like I said earlier, you can serve these
02:07 appetizer style with just some salsa and sour cream. They will go so fast, so make extra.
