00:04 I'm Lori Gelman for Howdini.com and if you're already excited about this
00:08 magical castle cake, then I hereby declare that you too can make this in your kitchen.
00:13 And we're going to find out how to make this cake for a boy or a girl.
00:17 To show us how, we turn to our friend, Leve Hanson, with the Betty Crocker Kitchens.
00:21 Hey Leve, how are you?
00:23 Hi Lori.
00:24 Now that is a very impressive looking cake.
00:26 Thank you.
00:27 But complicated if you don't know what you're doing.
00:29 Well if you take it step by step, you can do it.
00:31 I believe you. Step one, let's go.
00:33 Well you're going to need four 8 inch square cakes.
00:35 And I've chilled these in the freezer for about 30 minutes
00:38 so that they're not going to have as many crumbs when we cut them.
00:41 Now to make your tiers of your castle more level,
00:44 I recommend cutting off the domes on your cake.
00:47 So I'm going to use a serrated knife and go ahead and do that.
00:51 Then I'm going to use about one third of a cup and scoop it right on top.
00:58 Then I'm going to spread it evenly.
01:04 So now that that's done, I'm going to take the next cake,
01:06 invert it, and put it right on top and try to center it.
01:11 And again, another third of a cup.
01:15 And we're going to do one more layer.
01:18 Nice and tall.
01:20 You can push it down a little bit to try to make it more level.
01:24 For this one, we're going to cut into quarters.
01:38 I'm going to put a little dollop of frosting, spread it a little bit,
01:45 and that will be the glue for starting the next tier of the castle.
01:50 And we're going to repeat that.
01:58 Okay, and we're just going to use one more layer on top.
02:00 Now we're going to cut this one in quarters again to get about two-inch squares.
02:08 Are we going up even higher?
02:09 We're going to do a third tier.
02:15 And we're just going to do two for that.
02:17 So now we're ready to do a crumb coat.
02:19 What's a crumb coat?
02:20 A crumb coat is basically a thin layer of frosting that we spread over the entire cake,
02:24 and that will seal in some of the crumbs so that your final coat is nice and clean.
02:28 And I actually have one ready to go that we can start doing the final coat on.
02:31 Great.
02:32 I'll move this.
02:33 You get that.
02:34 Great.
02:35 Thank you.
02:37 That looks fancy already.
02:38 Yeah, for a little grander presentation, we put it on a pedestal.
02:41 That looks great.
02:42 So now we're going to start the final coat.
02:48 How pristine do you have to be with this?
02:50 As close as you can to get a flat finish, the better.
02:53 I just like to get all the icing on first, and then I'll try to flatten it out.
02:58 So now I have this lip of icing, and I'm going to start to slice it off, running my spatula in.
03:03 Don't start on your cake.
03:05 You want to start from outside and slice it in and over.
03:12 So now's the fun part.
03:13 We get to start decorating.
03:14 Oh, great.
03:15 I mean, it looks good enough already, but okay, let's do it.
03:17 I have a plate of sanding sugar here.
03:19 This is pink sanding sugar, and what I'm going to do is I'm going to take these ice cream cones,
03:24 ice them in the pink frosting, and you're going to roll it in the sanding sugar to get a nice glistening effect.
03:31 Sanding sugar you can buy at the grocery store?
03:33 You can.
03:34 Okay.
03:39 So I'm going to put it here, and you can just put your fingers in and roll it around.
03:42 Okay.
03:43 And I'll start the next one.
03:46 You're going to need five of these.
03:48 Okay, so now we're ready to put them on the castle.
03:51 Is there a trick?
03:52 Well, basically I would put your fingers in here and then hold at the top and just balance it very gently and place it on
04:00 and just sort of push it in a little bit to the icing to make sure it adheres.
04:04 Great.
04:05 And one for the top.
04:09 Beautiful.
04:10 Okay.
04:11 So now we're going to add some accents and candy.
04:13 Oh, good.
04:14 So we're going to add some sugar cubes, some little stars, and some gum balls, and some little wafer cookies.
04:22 So the sugar cubes, you can just place them.
04:28 We're going to put these little stars up here, and we'll use our frosting as the glue.
04:31 Okay.
04:32 Just dip it in a little bit.
04:35 And then maybe some of these gum balls.
04:42 Beautiful.
04:44 So now we're going to create the doors and the windows.
04:46 I'm going to use these little wafer cookies.
04:49 I'm going to use two for the door, and then I've cut some a little shorter to make for the windows.
04:56 How cute.
04:57 So I'm going to pipe on some accents.
05:08 And there you have it.
05:09 This looks so gorgeous.
05:10 I think the girls would love to have this at their party.
05:12 Look at that.
05:13 Thank you.
05:14 Oh, but the final touch.
05:15 Candles.
05:16 Birthday candles.
05:17 Two more right in the front.
05:18 Perfect.
05:19 And then you light them up and sing "Happy Birthday."
05:21 That's so great.
05:22 This is very girly girl, though.
05:23 Can you do a boy's castle?
05:24 Sure.
05:25 You can just frost it with chocolate and maybe change the color palette, use some yellow and blue and red candies,
05:31 and you can change the wafer cookies to chocolate or vanilla.
05:33 That's a great idea.
05:35 And put a moat.
05:36 Definitely.
05:37 A dragon.
05:38 I'm trying to think of something.
05:39 Sword.
05:40 I love it.
