00:12 Welcome to Betty's Kitchen.
00:13 Today we're making chocolate lava cake.
00:17 And for those of you who saw my video
00:19 on the trip that Rick and I took
00:22 to the Galt House in Louisville recently,
00:26 we ate at the Revue restaurant
00:28 and the dessert I ordered was chocolate lava cake.
00:31 And I think I mentioned I would make something
00:34 from that meal.
00:37 So I chose what I thought you might be most interested in
00:41 and the most intriguing item that was on the menu.
00:45 And it's more of a cupcake or a muffin
00:47 than it is really a slice of cake.
00:50 And if you saw that, you saw when I cut into it,
00:55 even though it had a surface that was cake-like,
00:58 inside it had pudding.
01:00 So here's how we're going to make it.
01:03 We're going to make chocolate pudding first.
01:05 And I'm just using a brand, Jell-O brand, Cook & Serve.
01:10 And it's the larger size.
01:12 So get the one that takes three cups of milk
01:17 instead of the two cups, a little bit larger.
01:20 Really, you probably don't need that much,
01:22 but I just wanna make sure I have plenty of pudding
01:24 to work with.
01:25 And I'm emptying out the mix.
01:28 And all you have to do is mix it with milk.
01:32 We need three cups of milk.
01:34 And we'll mix it together.
01:38 And it was a Cook & Serve type of pudding.
01:42 Sometimes you can get instant puddings.
01:44 And I tried to stay away from that
01:45 because this is gonna get cooked again.
01:48 And instant puddings might be composed of ingredients
01:54 that can't be cooked again.
01:56 I really don't know.
01:57 So I'm just gonna mix this around.
02:00 Then I'm going to go to the stove with it.
02:02 And at medium heat, I'm going to bring it to a boil.
02:06 And as soon as it comes to a boil, I take it off the heat.
02:09 So I'll see you back then.
02:10 My pudding has just started to bubble a little bit.
02:14 And you do need to keep stirring this continually
02:17 as you have it over the heat.
02:19 Otherwise, it will stick and maybe get some lumps in it.
02:21 We don't want that.
02:22 So I'm gonna turn it off and bring it over to my workspace.
02:26 So that's a nice chocolate pudding.
02:30 It's made from a mix, but nothing wrong with that.
02:33 What you can do is place this in custard cups
02:38 and put it in the refrigerator
02:40 and then top it with some whipped cream
02:41 and a cherry or something like that.
02:44 It's a good dessert.
02:45 But our purpose is a little different.
02:47 What we're gonna do is try to make a cake
02:51 where the outside is cake, but the inside is pudding.
02:54 So I need a way to get this pudding
02:56 on the inside of a cake.
02:59 What I'm gonna do is take a smaller spoon
03:02 and just overlap this so I won't spill too much,
03:07 but fill these about half the way full.
03:11 And I may have some drips here,
03:16 but we won't worry about cleaning it up
03:18 until I've done them all.
03:20 So you can see what that one looks like.
03:24 I'm going to go through and fill all of them halfway full.
03:28 And then I'm going to take them to the freezer
03:32 and I'll watch them pretty closely
03:34 because it won't take too long for them to cool down
03:36 so that they will hold their shape.
03:38 We're putting them in this muffin tin to get the form.
03:42 And the form is gonna fit down inside another larger
03:46 muffin tin that we'll use later on.
03:48 So I'll see you back in a few minutes to continue.
03:51 We're continuing with our chocolate lava cake
03:54 and I'm gonna show you how to make the cake part.
03:57 And I would like to emphasize that here,
04:00 I'm just using mixes.
04:03 If you want to use original varieties of puddings
04:07 and cakes, then that's nice.
04:09 I'm sure at the review restaurant where we ate
04:12 that it was all original,
04:14 but the technique is what I'm trying to show you.
04:17 So I'm just quickly putting together a cake.
04:19 This is a cake mix and I picked out triple chocolate fudge
04:24 because I thought that would really go along
04:27 with the spirit of the dessert that I ordered.
04:31 So in here is our packet of mix
04:36 and I've already beaten the three eggs
04:38 that the mix requires.
04:39 And I'm just going by the package instructions.
04:42 I'm going to add one half cup of oil
04:47 and I'm just using a vegetable oil, which it called for.
04:51 So that goes in with the three well-beaten eggs,
04:56 one and one third cups of water.
04:59 And that gives a nice liquid base
05:04 because we're getting ready to put in this dry mix.
05:08 And this is the chocolatey mix for the cake.
05:11 (plastic crinkling)
05:14 So I'm going to put that in all at once, kind of gently.
05:19 And then I think I'll stir it around a bit
05:23 and then I'll be beating it.
05:27 I'll beat it for two minutes.
05:29 I think that's what the instructions said.
05:31 I'll look back at them again just to make sure.
05:34 But whenever this is ready,
05:36 then I will get those cups of pudding
05:41 that we filled maybe one third or halfway full
05:46 and a second in the freezer.
05:48 So they should be formed up by now
05:51 and they will be ready to put in the center of our cake mix
05:56 as we put our cake mix into a larger muffin tin.
06:02 So this should work out really nice
06:05 and I think you'll enjoy this recipe.
06:06 And it's not going to be hard if you use mixes.
06:09 So I'll be back in a minute to finish this up.
06:11 My cake mix is put together so it's ready to go.
06:14 And I want to show you that I have sprayed
06:18 all of these muffin tins, the large ones,
06:20 that I'm going to put the cake in.
06:22 And I have gotten from the freezer
06:25 the pan where I put the pudding.
06:28 And it's almost frozen.
06:31 It's just very cold.
06:32 I think it's cold enough to hold its shape well enough
06:35 for me to put it in the center here.
06:38 So what I'll have to do is take a little bit of cake mix.
06:42 Now this may be drippy,
06:43 but I'll come back with a cloth and clean it up.
06:46 But I'll put some cake mix on the bottom
06:48 because I don't want that pudding touching the bottom.
06:51 But you see that those are pretty small.
06:56 So I can do quite a bit on the bottom here
06:59 and still have room to put one in.
07:01 So I just want to show you one.
07:03 And then I will continue to do the others.
07:06 And we'll put them in the oven.
07:08 Whatever batter is left over,
07:10 I'll make into cupcakes or a small cake or something.
07:12 But these are large muffin tins,
07:15 so it's going to take quite a bit of that.
07:17 But let me just come over here
07:18 and get one of these circles of pudding.
07:22 And it's very cold, not really frozen, but very cold.
07:25 And I'm going to try to center it there
07:28 and make it as undisturbed as possible
07:33 and then continue to cover it with my cake batter.
07:38 So here we go.
07:40 And you want your cake batter generally
07:42 to be about 3/4 of the way up a muffin tin
07:45 because it's going to rise
07:47 and we don't want it to have a muffin top.
07:50 We just want it to be rounded and nice on the top.
07:53 So I think that probably would be good enough on that one.
07:56 So I'll continue the others
07:57 and then they will go in the oven.
07:59 And I'm cutting the temperature from 350
08:01 back to 300 degrees because of the cold center.
08:05 I want it to cook a little bit slower
08:07 so it will be sure and get done.
08:09 So I'll have these in the oven
08:12 and I'll show you what they look like when they come out.
08:15 I'm ready to serve up my chocolate lava cake.
08:25 And I want you to see that this is the pan
08:28 that has the filled cakes.
08:32 So inside there is pudding
08:33 and you can see it's kind of come up to the top.
08:36 Over here, I had enough leftover to have six cupcakes.
08:40 So that's kind of nice as a bonus.
08:42 I'm going to use vanilla ice cream
08:44 just like we had at the review.
08:46 I think they had one scoop.
08:47 I decided since these were bigger,
08:50 these and there's a more muffin type
08:53 and this is a large muffin type.
08:55 I used two scoops here of vanilla ice cream.
08:59 So I'm just going to take a knife.
09:00 This is still hot actually.
09:02 I let it bake for 15 minutes
09:06 and I did turn it back to 350
09:09 because I had decided to cook it slowly
09:12 and then I decided it's gonna need more than that.
09:14 And it took about 15 minutes for it to bake
09:17 and appear to be done.
09:19 So I'm gonna get that out
09:21 and put it over here
09:22 beside my two scoops of vanilla ice cream.
09:26 And then we'll see how it opens up.
09:29 So you neatly remove that
09:32 and put it against your ice cream.
09:34 Put it with a cup of coffee and there you go.
09:37 Now I know you want to see what is inside
09:51 our chocolate lava cake.
09:53 So I'm just gonna take a,
09:54 this is a steak knife actually.
09:56 I'm gonna take a knife and cut through here.
09:59 Just kind of saw across.
10:02 And you can see that there is our pudding.
10:09 It kind of is toward the bottom.
10:11 So you might use this as an example
10:13 and put yours a little higher up
10:15 but you have some nice pudding tucked in there.
10:19 Hot because it's heated through
10:21 and all of this is cooked thoroughly
10:23 and it looks wonderful.
10:24 Think I'll take a bite.
