00:00 G'day guys and welcome to Aussie Grilla.
00:02 Now today I'm going to show you how I make a chocolate mud cake.
00:06 Now this is absolutely fantastic so make sure you give it a go.
00:11 Alright now guys any chocolate cake is good but this is better.
00:16 I've got some dark cooking chocolate, some caster sugar, some flour, some butter, some
00:24 water, some thickened cream and some beaten eggs.
00:31 Now I've got some simmering water here in a pot, I'm going to put my mixing bowl on
00:34 top of it.
00:35 Now I'm going to add 300g of dark cooking chocolate here, followed by 190g of butter,
00:50 using unsalted butter here guys, 330g of caster sugar and 500ml of water.
01:01 Now you just want to let this slowly melt together, don't rush it, it'll take about
01:06 15 minutes or so.
01:09 And what you'll wind up with is quite a runny mixture, but this is how it's supposed to
01:14 be.
01:15 I'm just going to take it off to cool, until it's about lukewarm, this will take about
01:17 20 minutes or so.
01:18 Now I'm adding in 3 beaten eggs, you don't want the chocolate mix to be too hot here,
01:24 otherwise the eggs will scramble.
01:26 Now I'm going to sift in 330g of self raising flour, a bit windy today obviously.
01:36 Now I'm just going to take care to mix this all in until it's nice and smooth, you don't
01:44 want any lumps in that, use a whisk if you need to.
01:46 Ok now I've got a 22cm springform pan, greased with a bit of butter, I'm just going to pour
01:54 that mixture in.
01:55 Now I've got the BBQ pre-heated to 180 degrees, set up for indirect cooking.
02:07 Now I've got a bit of foil licked up on the edges here, this is to accommodate the bigger
02:11 pan so the edges do not burn.
02:16 Now you want to let this cook for, it's going to take a good hour or so guys, you want it
02:25 to cook until the skewer can go in and come out clean.
02:28 And that's how it looks once it's baked.
02:33 Now this is going to take a little while for that cake to cool, so in the meantime I'm
02:36 going to make a lovely ganache to spread over the top of it.
02:40 Here I've got 250g of dark chocolate and 180ml of thickened cream.
02:52 Using the same technique as with the cake, I'm just going to let this slowly melt, until
02:59 those ingredients combine.
03:01 And here we've got a lovely thick rich ganache.
03:06 Now you want to let this cool for about 15 minutes or so before spreading it over the
03:12 cake.
03:13 Now you want it to be lukewarm for that.
03:16 And here I've got the cake, I've evened out the top of it.
03:19 You can use a cake slicer for a square top if you like.
03:22 I'm going with a domed top today.
03:24 As you can see that ganache has thickened a little bit more.
03:28 And now it's simply a case of pouring it over that chocolate cake.
03:47 Right now what I'm doing here is I'm just using a spatula to spread it evenly all over
03:51 that chocolate mud cake.
03:53 And then you just want to refrigerate it for an hour or so to help that ganache fully set.
04:02 And there you have it guys, chocolate mud cake.
