How to Bake a Simple Sponge Cake + Bonus Tip using Pandan Leaves

00:00 Let's bake a cake. First you will need 3/4 cups of sugar divided, 3/4 of a cup of
00:10 flour, about 40 milliliters of oil and milk which is roughly 2 tablespoons plus
00:17 2 teaspoons, 1/4 of a teaspoon of baking powder. I like to use the Alsa brand
00:23 because it increases the volume and lightens the texture of the batter. And
00:28 finally you will need 1, 2, 3, 4 eggs. Firstly you will have to separate the
00:38 egg yolks from the egg whites. Next add about 1/4 cup of your sugar to the egg
00:47 whites. Using an electric hand beater mix your egg whites and sugar until they
00:54 form a thick whipped cream like consistency.
01:11 You know your mixture is ready when the peaks stay on the blade when you lift
01:17 the egg beaters. Add the rest of your sugar to the egg yolks.
01:24 Using a hand whisk mix until the sugar is completely dissolved in the yolk. Then
01:38 you will want to add your milk and your oil and mix until smooth.
01:56 Sift all your flour and the baking powder into the batter to get rid of any
02:01 lumps. Make sure that you mix your batter really well and if you're feeling extra

02:51 before adding the batter so that when my cake is done it will easily release from

02:59 You'll want to bake your cake at 350 degrees for 30 minutes and then lower it

03:29 Set your cake on a rack to cool. This sponge cake tastes really good on its
03:35 own but feel free to add some strawberries or icing or whipped cream or

03:53 A popular variation of this cake uses pandan flavor. I like to make my own
04:03 flavoring using fresh pandan leaves but you can also use a few drops of pandan
04:09 extract instead. This can be found at your local Vietnamese market. After
04:15 washing your pandan leaves, chop them into smaller pieces. This will make your
04:20 pieces more manageable and make it easier to blend. Place them into a
04:25 blender and add a little water. This will help the leaves mix easier and give it
04:31 more of a liquid substance. Be sure not to add too much water as it will end up
04:37 getting watered down. After a minute your leaves will look like wet green moss.
04:44 Yummy right? Yeah, maybe not. Next you'll want to squeeze out the liquid
04:51 flavoring and discard the moss. You'll want to keep the same amount of liquid
04:56 added to our batter. You can adjust the ratio between juice and milk to your
05:02 liking but remember to only add a total of 40 milliliters of liquid to the
05:07 batter. Any leftover juice can be put into ice trays and kept frozen for future
