How to Make the Best-Ever Chocolate Cake

00:11 And today we're going to make our best ever chocolate cake.
00:15 Now this is the most moist, rich, creamy, delicious, super chocolaty-est cake you will
00:21 ever ever have.
00:22 And I promise if you pair it with our chocolate sour cream frosting or even your favorite
00:26 frosting it is bound to be a huge knock it out of the park hit.
00:30 So it's really easy to make and I have our ingredients all laid out here.
00:34 We have one and a half cups of milk, three quarters of a cup of unsweetened cocoa powder,
00:41 two cups of all purpose flour, three eggs unbeaten, two cups of sugar, three quarters
00:48 of a cup of unsalted butter, we have one teaspoon of baking soda, a half of a teaspoon of salt,
00:56 we have two teaspoons here of vanilla, three quarters of a teaspoon of baking powder, and
01:02 then these four ingredients up here comprise our chocolate sour cream frosting which is
01:09 so so tasty.
01:11 So here we have a quarter of a cup of unsalted butter, one cup of semi-sweet chocolate pieces,
01:18 two and a half cups of powdered sugar, and four ounces or half of an eight ounce container
01:24 of sour cream.
01:25 Now a quick note about this, as you'll see over here we have a thirteen by nine inch
01:30 pan.
01:31 This recipe that we have, the actual cake recipe, will either make one thirteen by nine
01:38 inch sheet cake or you have two other options.
01:42 It will make two nine inch by one inch round cakes or two eight inch by eight inch square
01:49 cakes.
01:51 If you choose to do the two cakes, either the round or the square, you would need to
01:55 double the frosting recipe.
01:56 So just double everything and you will frost those beautifully.
02:00 But if you're just doing a sheet cake like we are today, just use the recipe as I provided
02:05 it to you.
02:06 So let's get started.
02:07 We are going to get started with the actual cake part.
02:10 So I'm going to begin by adding my flour, my cocoa powder, my baking powder, my salt,
02:27 and my baking soda.
02:28 And I'm just going to mix this all together until it's perfectly mixed and then we're
02:33 going to set it aside.
02:35 Okay, so our next step now is going to be beating the butter.
02:40 A quick note about both the butter and the eggs.
02:42 We've let the eggs and the butter sit out at about room temperature for at least thirty
02:47 minutes.
02:48 We're going to be beating the butter with an electric mixer and if it was cold and hard,
02:51 it would be really, really difficult to do.
02:53 So pop the butter into the bowl.
02:55 So let's mix our butter on medium to high speed about thirty seconds.
02:59 Okay, so now it's time to add in the sugar.
03:03 Remember, a quarter of a cup at a time.
03:06 And we're going to continue stirring and mixing.
03:10 We're going to keep doing this until all of our sugar is incorporated.
03:12 It's going to take us about three to four minutes.
03:16 So now our butter and sugar are all creamed and we're going to add the eggs in one at
03:20 a time, continuing to beat about one minute total.
03:23 Great, now that's all mixed together.
03:26 The last step is to put in our vanilla.
03:30 Okay, now we're ready to add in the milk and our delicious flour chocolate mixture over
03:38 here.
03:39 So we're going to do a little bit of each alternating.
03:40 So a little bit of milk goes in and then a little bit of the mixture.
03:47 We're just going to keep on going like this until it's all combined.
03:54 And when you're mixing something together, be sure to keep scraping the sides and just
03:58 kind of folding in any dry ingredients that are clinging to the side as you go.
04:05 Okay, so we are ready to pour our beautiful super chocolate cake mixture into this pan.
04:11 This is a 13 inch by 9 inch again.
04:13 And this has been greased.
04:16 First put a little bit of parchment or wax paper down.
04:18 Then grease it with your grease of choice and then lightly flour.
04:21 So that's happening here.
04:23 And then behind me, the oven is preheating at 350 degrees.
04:26 I'm just going to spread this out evenly.
04:29 And we're going to pop it in the oven for about 35 to 40 minutes for either this 13
04:37 inch or the 2 8 inch or 30 to 35 minutes if you're doing those 2 9 inch pans.
04:43 So now we're going to pop it in the oven 350 degrees.
04:46 For this it's going to be 35 to 40 minutes or until I can insert a wooden toothpick in
04:50 the center and it comes out nice and clean.
04:52 I'm going to pop this in the oven and get started on my chocolate sour cream frosting.
04:56 So we are going to begin by melting the chocolate in this sauce pan.
05:01 I have it on really low heat.
05:03 When you're melting chocolate, it's pretty difficult if you just were to throw the chocolate
05:08 in there without some sort of fat, either like an oil or a butter, the chocolate will
05:13 just, it melts really, really fast and it will just burn.
05:16 So I'm adding in the butter first and then adding in the chocolate.
05:20 I'm just washing it and mixing it together.
05:23 And the moment it's all melted, just going to turn the heat off and let it sit for 5
05:28 minutes.
05:29 Okay, so my chocolate and butter melted beautifully together.
05:32 I've let it cool for 5 minutes and I transferred it to this bowl just for easy mixing.
05:37 I'm now adding in the sour cream and I'm just going to mix this together just quickly.
05:42 We're going to be beating this in a second with the electric mixer, so no worries.
05:46 Just give it a nice little, nice little twirl.
05:49 Oh, it smells so good.
05:50 Chocolate and sour cream, oh my gosh.
05:53 Okay, set this to the side and we're just going to start adding in our powdered sugar
05:58 and mixing it together until it's all nice and combined.
06:01 We're going to do it a little bit at a time.
06:05 Anytime you're introducing like a powder into some sort of liquid, like a solid, you want
06:11 to do it slowly so it has time to mix together and kind of absorb the dry ingredient.
06:18 And we are good to go and frost our cake.
06:26 So the beautiful cake is all frosted.
06:28 I'm so excited about this chocolate sour cream frosting.
06:31 It really brings something a little bit different to the dish.
06:34 This is definitely bound to be a crowd pleaser because after all, this is our best ever chocolate
06:39 cake.
