00:06 today i m sharing with you a recipe of aloo biryani
00:11 its a very easy and delicious biryani
00:15 ingredients we need are
00:17 750 gm basmati rice
00:20 use good quality basmati rice for biryani
00:24 i soaked it for 15 minutes
00:28 i will show you how to boil it later
00:30 1 kg red skin potatoes
00:33 i bought it from pakistan
00:35 you can get good quality potatoes in pakistan
00:38 they are less starchy
00:40 and they are not sweet at all
00:42 they are very tasty
00:43 3 medium size onions
00:47 4 medium size tomatoes
00:51 this is the same biryani masala i have shown you in another video
00:57 i will use it to make aloo biryani
01:01 1/2 cup yogurt
01:03 food color
01:06 1 cup oil
01:09 i am using oil but you can use ghee also
01:12 ingredients for biryani are
01:17 1 tbsp cumin seeds
01:21 2 inch ginger julienned
01:25 1 cup coriander leaves
01:30 1/2 bunch mint leaves
01:34 7,8 green chillies,i am using big ones but you can use small ones if you want
01:41 8,10 dried plums
01:48 1 tbsp garlic paste
01:53 1 tsp ginger paste
01:55 1 tbsp garlic paste
01:57 1 tsp ginger paste
01:59 1 tsp black pepper corns
02:05 2 inch cinnamon sticks
02:09 3 black cardamoms
02:13 6 green cardamoms
02:16 12 cloves
02:20 i heat the oil
02:22 i fry the onions first.
02:27 onions are golden brown now.i will remove them from the oil immediately.
02:45 because onions have the quality that it will be dark in color even after removing from the oil.
02:54 i remove the onions from the oil and put them aside.
02:56 now i will fry the potatoes in the same oil.
03:00 the purpose of frying is to get the potatoes golden brown not to cook them completely.
03:05 i put the potatoes in the oil to fry.
03:09 when they turn golden from one side i will turn them and fry them from the other side.
03:19 potatoes are fried now.
03:24 i will remove them in a plate.
03:27 you can use potatoes without frying but these are crispy and taste better.
03:36 now i will add ginger and garlic paste in the oil.
03:55 i will add only 1 part of the onions in the oil and i will add the rest of the onions while layering.
04:06 all the spices will be added in the oil.
04:14 i add 1/4 glass of water in the oil because i added ginger and garlic paste in the oil.
04:20 add 1/2 glass of water in the oil and fry the spices till raw smell goes away.
04:39 add all the spices in the oil.
04:47 mix it well.
04:49 spices are fried now.
04:58 now i will add the dry plums in the oil.
05:04 if you want it more sour then you can add 2,3 dry plums.
05:16 add potatoes in the oil.
05:18 mix it well.
05:44 add 1/2 glass of water in the oil.
05:47 1/2 glass of water is enough to cook the potatoes.
05:59 if required you can add more water.
06:03 i will add more water if needed.
06:06 now i will cook the potatoes on med flame.
06:12 potatoes are almost cooked now.
06:18 add green chillies in the potatoes.
06:22 add yogurt 1/2 cup
06:28 cook it on high flame
06:35 potatoes are almost ready so we don,t need to cook it for more time.
06:42 i add salt in it but i think 1/2 tsp salt is not enough.so i add 1/2 tsp more.
06:50 now we will layer the tomatoes in the potatoes.
06:57 but we don,t need to cook them.
07:01 we just need to soften them.
07:04 add ginger in it.
07:09 mix it well.
07:11 now we will cook it for 2 minutes on high flame.
07:21 i have a tip for you,you can see 2 parts of rice are boiled.
07:31 i have taken 1 part of 750 gm rice and 2 parts of rice.
07:36 when i see 60% of rice is boiled i check it and strain it in a strainer.
07:48 and i will boil the rest of the rice till it is 80% done.
07:54 this way the rice will be evenly cooked in the biryani.
08:06 this is a tip for you,follow it and you will get a very good biryani.
08:12 i have already layered the rice.
08:15 i am showing you the way to do it.
08:21 first we will sprinkle fried onions in it.
08:30 then coriander leaves.
08:35 mint leaves
08:44 and then we will add the rice we boiled earlier.
08:53 now we will add the rice we boiled earlier.
09:10 add fried onions
09:15 i have added 1 tsp kewra water in 1 tsp water and dissolved it in it.
09:25 i will drop it in 2,3 places.
09:30 add mint leaves
09:32 add coriander leaves
09:36 drizzle 1/2 cup oil on it.
09:42 use hot oil to heat the oil.
09:47 now put a tea towel on the lid of the pot.
09:50 and put some weight on it.
10:02 i am showing you the flame,i always put the weight on my finger.
10:07 so you can see the flame is very high.
10:10 i will cook it for 5 minutes on this high flame.
10:15 after 5 minutes i will turn the flame to low.
10:21 our delicious aloo biryani is ready.
10:25 it is very tasty.
