00:00 Assalamualaikum Warahmatullahi Wabarakatuh,
00:02 How are you all? I am Shabina Thakur.
00:04 And you are watching Cooking with Shabina Ali.
00:06 Today I am sharing with you a wedding dish,
00:09 Salani
00:10 It is a coconut dish,
00:12 it is very delicious.
00:14 For this we have taken 250 grams of goat meat,
00:17 and washed it well.
00:19 This dish is very popular in Marol.
00:23 So let's see what ingredients are required for this,
00:26 and how it is made,
00:28 and we will make it together and show it to you.
00:30 So we have taken a pan here,
00:33 and we will add 1/2 cup of dried coconut,
00:37 which I have grated.
00:39 And 1 tablespoon of Sabit Badi Saunf,
00:43 1 tablespoon of cumin powder,
00:48 and 2 tablespoons of coriander powder,
00:54 and 1 teaspoon of garam masala powder.
00:58 Now keep the flame on low and roast it well.
01:05 It is roasted well, now turn off the flame and make a fine powder.
01:12 Now we have taken a mixer,
01:15 and we will add the roasted spices in it.
01:19 1 handful of coriander leaves,
01:27 and 2 green chilies.
01:35 We will add some water to it and make a fine paste.
01:39 Now we have taken a pot,
01:43 and we will add 1/2 cup of oil in it.
01:45 And when the oil is hot, we have taken 3 medium sized onions,
01:50 and we have finely chopped them.
01:52 And now we will add 2 bay leaves,
02:00 and some whole spices.
02:10 So here we have taken 3 green cardamoms,
02:14 and 4 to 5 cloves,
02:17 2 black cardamoms,
02:23 and 1 cinnamon stick.
02:32 Keep the flame on high and do not brown the onions,
02:36 just roast it until it turns pink in color and becomes soft.
02:42 We have roasted it for 5 minutes,
02:46 and it has turned pink in color and soft.
02:54 Now we will add the mutton in it.
03:06 And we will roast it for 5 minutes in the onions and oil.
03:13 Now we will add 2 tablespoons of ginger garlic paste.
03:21 Now we will add 3 medium sized tomatoes,
03:25 which we have cut into round pieces.
03:29 So it will get cooked quickly, so we will roast it well.
03:39 It has been 5 minutes,
03:42 now I will add 1/2 teaspoon of turmeric,
03:46 and 1 tablespoon of red chili powder.
03:49 We will add it and mix it well.
03:55 And we will roast it.
04:02 Now we will add salt to taste.
04:06 You have to add salt and red chili according to your taste.
04:11 It has been 5 minutes,
04:14 now we will add the spices that we have ground,
04:17 dry coconut,
04:19 and the spices that we have made,
04:21 we will add it to it.
04:23 And we will roast it well for 10 minutes.
04:35 This is a wedding meal for the Kokani people.
04:38 You will like it a lot.
04:40 You should definitely make it.
04:44 Now until the rawness of all the spices is not removed,
04:48 we will roast it.
04:55 Now it has been 15 minutes,
04:59 we have roasted it well.
05:00 You can see that the oil has separated from the spices.
05:04 So, it has a very nice aroma.
05:08 If you want it dry,
05:10 then you can cook it for 5 minutes and serve it.
05:15 But this is a wedding meal,
05:16 so I will add a little water to it.
05:20 So, I have taken about 1 cup of water from the spice water.
05:32 Here we are making a wedding meal,
05:34 so we have added this water.
05:38 Now you can taste the salt at this point.
05:42 If you need, then add it to it according to your taste.
05:48 Now we will cover it with a lid
05:51 and leave it to cook on a low flame for about half an hour.
05:57 If you are making it in an open pot,
06:00 if you are making it in a cooker,
06:02 then let it cook well until 5 whistles.
06:09 But I don't have a pot,
06:12 so I am making it in a pot.
06:15 If you have a pot, then make it in it.
06:18 It's been half an hour,
06:20 now let's check it.
06:24 Hmm, it smells so good, Mashallah.
06:29 Our Shikori is ready.
06:33 Now we will add some fresh coriander to it.
06:43 And mix it.
06:45 Look at its gravy,
06:48 this is how we want it.
06:51 This is a wedding meal.
06:56 Now let's serve it.
07:16 This is Shikori.
07:18 Now I will tell you what is called as Dhan.
07:20 So Dhan is rice.
07:22 So we have taken half a kilo of Basmati rice.
07:26 We had soaked it for an hour.
07:29 Now we will add to it,
07:31 1 teaspoon of cumin seeds,
07:35 2 bay leaves,
07:36 2 black cardamoms,
07:38 and 1 teaspoon of oil.
07:40 So we will add all of these,
07:42 and add salt to taste.
07:45 And we will leave all of these to cook.
07:51 Our Shikori is ready.
07:54 We have garnished it with fresh coriander.
07:59 We have served it with Dhan and cucumber.
