00:07 Hi, welcome to Sanjeev Kapoor Khazana. I am Jyotsna
00:28 and today we are going to make a recipe that is a snack dish
00:32 It's delicious, tasty, healthy also
00:35 and it's made of cottage cheese, that's paneer
00:37 and it's called Paneer Rolls
00:39 So for Paneer Rolls, we'll need the following ingredients
00:42 Some paneer, mashed potatoes, some cornstarch
00:46 red chilli flakes, crushed peppercorns
00:49 some mixed herbs, chopped black olives
00:53 chopped jalapeno peppers, carom seeds, that's ajwain
00:57 some oil for shallow frying, some bread crumbs
01:00 I've used brown bread crumbs here and salt to taste
01:04 So now let's start making our Paneer Rolls
01:07 We'll take a bowl. So what I'm going to do with the paneer is
01:10 I've grated a bit of the paneer and the rest of the paneer
01:13 I'm going to chop it finely so that when we bite into the paneer rolls
01:17 we'll get a nice feeling of paneer
01:20 It won't blend into the rest of the mixture
01:22 So these paneer pieces, we'll cut them into small tiny cubes
01:26 We'll take these chopped pieces of paneer
01:29 We'll add a bit of grated paneer to it
01:32 some mashed potatoes
01:34 We add all our different flavours
01:37 That's the jalapeno peppers
01:39 the olives
01:42 crushed peppercorns
01:44 red chilli flakes
01:46 the mixed herbs
01:48 and of course, salt to taste
01:51 Here we'll give it a nice mix
01:56 Try to mix it little gently so that the paneer cubes don't get crushed
02:03 We'll also add our cornstarch
02:06 Here we now need to use our hands
02:09 because nothing is possible without the final touch
02:13 The mixture is looking a little crumbly
02:15 That's good because of the paneer pieces
02:18 But when we make the rolls, it'll fall into good shape
02:21 We've made the mixture now
02:23 What we have to do is keep our breadcrumbs ready
02:26 I've used brown breadcrumbs so that it's little healthier
02:30 We're going to add these carom seeds, that's ajwain
02:33 in the breadcrumbs
02:35 It gives a very nice flavour when it's fried
02:37 So I've mixed the carom seeds in our breadcrumbs
02:41 Now we'll start making our rolls
02:42 If you want, you can make long shapes
02:45 or if you're serving it as a snack
02:47 you can make small bite-size shapes
02:50 So we'll make this size and we'll put it in the breadcrumbs
02:54 We'll roll it nicely so that the breadcrumbs and the ajwain
02:58 that's the carom seeds gets coated onto our paneer rolls
03:02 Our paneer rolls are now ready to be put into our pan
03:06 We've coated it with the breadcrumbs
03:09 We'll heat a pan and take a little bit of oil, not too much
03:13 just to coat the pan
03:16 If you want to try it without oil also, you can do that
03:19 or you can try and bake these also
03:21 Let's put our paneer rolls now into the pan
03:24 The cubes of paneer are giving it a nice texture
03:31 and I'm sure when you bite into it also
03:33 the taste and the flavour will be little different
03:36 From a regular, if you would have mashed it
03:39 it gives a different feel
03:40 and when we make cubes, it gives us a different feel
03:43 Now all we have to do is shallow fry these on medium heat
03:46 so that they don't burn
03:47 and we're using very little oil
03:49 so it's better to use medium heat for this
03:52 We'll shallow fry these until a nice golden brown colour
03:56 Our paneer rolls are now ready
03:58 so let's take them out, ready to be served
04:01 Let's take it out on a kitchen napkin
04:03 and then you can serve it
04:05 Try and serve it nice and hot
04:07 all the flavours blended together
04:10 We have this ketchup here, place our paneer rolls
04:15 Our paneer rolls are ready to be served
04:18 enjoyed and had at any party or any time
