Oreo Cheesecake Recipe

00:00 Hi everyone and welcome back to my channel.
00:04 Today we're making a no bake oreo cheesecake.
00:07 It's delicious and easy so let me show you the recipe.
00:12 I'm starting off with the base for the cheesecake so it can set in the fridge while I make the
00:19 filling.
00:20 The base only requires two ingredients, oreo cookies and melted butter.
00:25 The oreos need to be crushed first so they can be mixed with the butter and there are
00:30 two different ways that you can do this.
00:32 If you have a food processor just add the cookies and process until they resemble fine
00:37 crumbs.
00:38 If you don't have one you can do this manually with a plastic bag.
00:42 Just add the oreos into a bag, secure the top so they can't escape and use a heavy
00:47 object like a frypan or rolling pin to bash the cookies.
00:52 Pour the cookie crumbs into a bowl and set to the side.

01:08 Measure out the butter and add to a small microwave safe bowl or saucepan and heat in
01:13 the microwave or over low heat on the stove top until it has completely melted.
01:19 Leave it to cool for a few minutes so it isn't boiling hot.
01:23 Add the melted butter to the oreo crumbs and use a wooden spoon to mix the ingredients
01:27 together until the texture resembles wet sand.
01:32 Pour the cookie crumbs into a 20cm or 8 inch lined and greased cake tin and use the back
01:38 of a spoon to press the crumbs down firmly and evenly.
01:42 Place the cake tin into the fridge to set.
01:48 While the base is setting I'm going to start on the filling.
01:51 In a clean bowl pour in the whipping cream and whip until the cream is at this soft peak
01:56 stage.
01:57 You can tell it's at this soft peak stage when you lift up the whisk and the cream just
02:01 holds its shape.
02:03 I usually use a whisk for doing this, it doesn't take long at all, just a few minutes and you
02:08 have a lot more control not to over beat the cream rather than using a hand beater.
02:17 Beat the cream to the side, we'll use it in a few minutes.
02:24 In a medium sized clean bowl add in the room temperature cream cheese and icing or powdered
02:29 sugar.
02:31 By the way if you're wondering they are the same things, just different names.
02:36 Use a wooden spoon to beat the cream cheese and sugar together until it is completely
02:40 smooth and softened.
02:42 This should only take a minute or so.
02:45 Try to leave the cream cheese out for a few hours before you need to use it because you
02:49 will have such a hard time beating it straight out of the fridge.
02:55 Once the cream cheese and sugar is soft, in a small bowl add a tablespoon of gelatin and
03:00 a few tablespoons of boiling water.
03:03 Use a spoon to mix the gelatin and water together until the gelatin has dissolved.
03:09 This will take about a minute or so.
03:11 As this is a no bake cheesecake the gelatin is the setting agent, it's what's going
03:16 to make it hold it's shape.
03:18 If you would like a vegetarian alternative to gelatin try using agar agar.
03:25 Pour the dissolved gelatin into the bowl with the cream cheese and sugar and mix together
03:29 until well incorporated.
03:38 Use the whisk to beat everything together well.
03:41 You'll be left with a smooth cheesecake filling.
03:44 Before we add the oreo crumbs, reserve a cup of the cheesecake filling and set to the side.
03:49 We're going to use this later on to decorate the top of the cheesecake.
03:57 Pour in the oreo crumbs and use the whisk to mix them in.
04:01 Just a tip here, this cheesecake is cookies and cream flavoured so if you don't have
04:05 them or you don't want to use oreos you can use another brand, just make sure they
04:09 are chocolate cookies with the cream in the middle.
04:13 Pour the cheesecake filling into the cake tin and use a spatula to smooth out the top.
04:18 Place the cheesecake into the fridge for a few hours to set.
04:21 Make sure to leave the cup of cheesecake filling at room temperature, it will be fine for a
04:25 few hours out of the fridge.
04:28 After a few hours remove the cheesecake from the cake tin and place on a cake stand or
04:33 plate to serve.
04:35 Add the remaining cheesecake filling to a piping bag and pipe swirls on top of the cheesecake.
04:40 Top with whole oreo cookies and a sprinkling of crushed oreos.
04:45 Place the cheesecake back into the fridge for at least 2 hours before serving.
