Omlette Curry

Omlette curry is a traditional Indian dish famously known as " Mamlette r jhol " as well. A thin runny curry made with basic Indian spices and easily available vegetables couples best with steaming hot rice. It’s a great meal for lazy afternoons and quick to prepare.


For the omlette

Ingredients
9 eggs
Chopped Onion
Chopped chilly
Salt
Chilly powder
Coriander powder

Method
1) Crack 9 eggs in a vessel.
2) Add chopped onion, chopped chilly, salt, chilly powder, coriander powder and mix it well.
3) Drizzle oil in a pan and make omelette out of the egg mixture.
4) Cut the omlettes into short pieces.


For the curry

Ingredients
Mustard oil
Bay leaf, a dried chilly
Cumin seed
Potato
Tomato
Turmeric powder
Chilly powder
Coriander powder
Ginger paste
Garam masala
Chopped coriander leaves

Method
1) Add mustard oil in a pan.
2) Add bay leaf, a dried red chilly, 1/2tsp cumin seeds and temper it.
3) Add the chopped potatoes and fry for sometime.
4) Add chopped tomatoes, chilly powder, coriander powder,ginger paste and mix for sometime.
5) Add water and give it a boil.
6) Add the omlettes and let it simmer.
7) Add garam masala and chopped coriander leaves.
8) Serve it with steaming hot rice.
