Creamy Mascarpone and Mushroom Pasta

How to make the perfect Creamy Mushroom Pasta using Mascarpone.
Suitable for vegetarians.

Ingredients for 4 people

400g pasta (200ml pasta water for mascarpone)
400g mushrooms
320g mascarpone
80ml extra virgin olive oil
1 bunch of sage (keep 4 whole leaves fried per serving for garnish - chop the rest)
6 garlic cloves
4 tbsp toasted hazelnuts - crushed
salt & pepper to taste
