Today I am going to teach you how to prepare fried milk, a recipe with a rather curious name, and if you're wondering, it's not about pouring a glass of milk into the fryer.

Actually it's a very thick dough that once it's cold it can be cut into portions, batter and fry and then dip it in a mixture of sugar and cinnamon powder.

Normally the milk is flavoured with a cinnamon stick and lemon peel, but you can give it different flavours by replacing the lemon peel with an orange one or using only a vanilla pod.

To prepare fried milk you'll need:

- 500 ml. (16,91 fl. oz.) of milk

- 125 gr. (4,41 oz.) of sugar

- 60 gr. (2,12 oz.) of refined corn flour

- Lemon peel

- 1 cinnamon stick

- 1 egg

- Refined corn flour for dipping

- Sugar

- Cinnamon powder

To prepare fried milk you must follow the next steps:

- Dilute the refined corn flour with half of the milk.

- Infuse the other half of the milk with lemon peel and cinnamon stick.

- Remove the lemon peel and cinnamon stick.

- Add the sugar and refined corn flour diluted in milk.

- Cook over low heat while stirring until it begins to thicken.

- Paint a rectangular tray with oil and pour the thickened mixture inside.

- Spread the mixture well in the tray and cover with plastic wrap, touching the dough with the paper so that it doesn't form a crust.

- Cool in the fridge for at least 6 hours.

- Remove the solidified dough from the tray.

- Cut the dough into squares.

- Beat the egg.

- Dip the milk portions first into the refined corn flour and then into the beaten egg.

- Fry the milk portions in plenty of oil until they begin to brown.

- Mix sugar with cinnamon powder according to taste.

- Dip the portions of fried milk while still hot in the mixture of sugar and cinnamon powder.
