Chicken Salad Sandwhich Spread by Oncho's Kitchen

A simple chicken salad sandwich spread that is so easy to make and a quick meal for people on the go. You can prepare this ahead of time and keep it in the fridge, anytime you need it just pull it out and a nice sugar free wheat bread, lettuce and tomato is best with this. A good alternative for breakfast, lunch or even dinner. I made use of greens in this recipe like celery, onion leaks and pickle relish for that tangy taste. Carrots and pineapple chunks are also an option to incorporate in the recipe. Try and stay healthy! "We all can Cook"

TIPS:
1. Lightly toast the bread for an extra crunch.
2. Put a teaspoon or two of that pickle relish juice on the chicken salad.
3. Use fresh lettuce, tomato, onion or cucumber when you make your sandwich.

FYI:
1. Chicken is very high in protein low in sodium and is a good source for blood-building vitamin B6.
2. Celery and onions add great nutritional benefits to chicken salad. They provide dietary fiber and a healthy mix of vitamins and minerals, including vitamin C, vitamin B6, folate, manganese and potassium.
