Chocolate mocca cream custard:

Ingredients

Whipped cream 2 cups
Caster sugar ½ cup
Chocolate chips ½ cup
Coffee 1 tsp
Egg yolks beaten 4

Method

Combine cream, sugar, chocolate chips, instant coffee in a sauce pan, heat mixture to boiling, stirring constantly, remove from heat, beat with whisk until smooth, gradually add egg yolks stirring constantly, mix well, pour into 6 ramekins, place in a baking pan on oven rack, pour hot water into pan, cover pan with foil, bake on 180 d for 45 mins until set, remove cups from water, cool and decorated with whipped cream.

Fried cheese crackers:

Ingredients

Cheese crackers 1 packet
Cream cheese triangles as required
eggs beaten 2

Ingredients for seasoned crumbs

Bread crumbs 1 ½ cup
Salt ½ tsp
Black pepper ½ tsp
Crushed red pepper 1 tsp
Parmesan cheese 3 tbsp
Method

Mix all the ingredients together listed in seasoned crumbs in bread crumbs and keep aside, open up crackers, spread a chunk of cream cheese in between a cracker and press with the other cracker, be careful not to break, dip in beaten eggs, coat in seasoned crumbs, deep fry, serve immediately.



Breakfast quiche:

Ingredients
Bread slices 8 to 10
Egg beaten 1
Melted butter to brush
Ingredients for filling
Grated cheddar cheese ½ cup
Oil ¼ cup
Chopped garlic 1 tsp
Capsicum chopped 1
Sweet corn ½ cup
Onion finely chopped ½ cup
Sausages finely chopped 1 cup
Oregano 1 tsp
Crushed red pepper 1 tsp
Salt & black pepper ½ tsp each
Chili sauce 2 tbsp
Soya sauce 1 tbsp
Vinegar 1 tbsp
Mushrooms ½ cup
Ingredients for quiche toping
Eggs 2
Milk ¼ cup
Cream ½ cup
Method
Grease a tar tray with butter, remove the edges of the bread slices and roll them out thinly, press down rolled out bread slices brushing with egg wash at edges and pressing each slice into the another to form it into a base, remove the excess around the edges with a knife, and make the base of the quiche with slices, brush with melted butter , bake for 10 mins on 180 d, heat oil in a pan, fry garlic sausages, vegetables, add all the seasonings, then spread the bread base with white sauce, spread with grated cheese, top with cooked filling and veggies mixture, lastly top with topping, pour on top of the quiche, bake on 180 d for 15 mins till set, remove and serve.
