Cheesy Homemade Bread Boat Stuffed With Ground Beef & Grilled Vegetables

A wise man once said, "You can bake everything with cheese. You can even bake cheese with cheese." We'll toast to that! Even if you're not already a cheese lover, the following recipe – with its tasty combination of ground beef, grilled vegetables, and ooey, gooey cheese, all packed into a delicious loaf of homemade bread – is sure to change your mind!
You'll Need:
For the bread boat:
- 8 fl oz lukewarm 2% milk
- ½ tsp salt
- 1 tsp sugar
- 2 tbsp fresh yeast
- 2 tbsp butter
- 1 tbsp cream
- 16 oz all-purpose flour
- butter and flour to grease the pan
- flour for your work surface
For the filling:
- coconut oil for cooking
- 1 onion
- 1 zucchini
- 6 oz brown mushrooms
- salt & pepper to taste
- 1 tbsp honey
- 10 oz ground beef
- 14 oz tomato puree
- 6 oz shredded Swiss cheese
- 3 oz shredded cheddar cheese
Here's How:
1. Preheat the oven to 400°F and prepare the bread using the above ingredients. Knead the dough into a ball, place it in a bowl and cover with a towel, and let it sit in a warm place for 1 hour.
2. Once the dough has nearly doubled in size, knead it again on a floured work space. Grease and flour a loaf pan, place the dough inside, and let it sit for another 15 minutes.
3. Brush the dough with cream and bake the bread loaf for 30 minutes, or until golden brown. Remove the bread from the oven and leave the oven on for later.
4. Heat coconut oil in a pan over medium heat and fry the vegetables. Season everything with salt and pepper and a dollop of honey. Pour the vegetables into a bowl and set aside for now.
5. Brown the ground beef in the same pan and season with salt and pepper. Stir in the tomato puree and bring to a simmer.
6. Cut a lid off the bread loaf and hollow out the inside.
7. Fill the bread boat with the following layers: Swiss cheese, vegetables, meat, vegetables, and finally Swiss cheese.
8. Place the lid back on the loaf and sprinkle the cheddar cheese on top. Put the bread back in the oven and bake for another 30 minutes.
Try experimenting with other fillings – you could even omit the meat for an all veggie version. The important thing is to make sure you have enough cheese, because honestly, there's no such thing as too much cheese!
