Are you in the mood for a casserole, but feel like all the pasta and potato dishes have been done to death? Then this hearty French take on schnitzel is just the thing for you! With just a few ingredients, this pork casserole manages to catapult you right into a flavor sensation.
You'll Need:
- 2½ lb pork tenderloin
- salt & pepper
- 14 oz crème fraîche
- 2 red onions
- 10 oz bacon, chopped
Extra:
- oil for cooking
- chives to garnish
- round casserole dish
Here's How:
1. Preheat the oven to 400°F and cut the pork tenderloin into thick pieces.
2. Lay the pork pieces between two large pieces of plastic wrap and then beat them with a meat tenderizer until they are thin schnitzel slices.
3. Season the meat with salt and pepper and fry in a pan on both sides until cooked through. Place half of the cooked pork schnitzels on the bottom of a round casserole dish.
4. Spread half of the crème fraîche over the meat.
5. Fry the red onions and bacon together in a bit of oil and sprinkle half of the mixture on top of the crème fraîche.
6. Place the remaining meat on top.
7. Spread the rest of the crème fraîche over the meat, sprinkle the remaining bacon and onions on top, and cook for 15 minutes. Garnish the Alsatian schnitzel casserole with finely chopped chives, and after just one bite, you'll see what you've been missing out on all these years!
