From the sweet candy to the animated series, gummy bears just evoke happy childhood memories. If you want to give your children the same warm and fuzzy feelings, nothing says "I love you!" like a gummy bear rainbow cake! But why stop there? Whether it's a birthday cake for the little one or a special weekend treat for yourself, kids and grown-ups love it so!

You'll Need:

For the cake batter:

- 8½ oz flour
- 4½ oz butter, room temperature
- 2 eggs
- 8 oz sugar
- 3 tsp baking powder
- 1 tsp vanilla extract
- pinch of salt
- 8 fl oz milk
- 2 oz rainbow sprinkles

For the inner layers of buttercream frosting:

- 26½ oz butter
- 14 oz powdered sugar
- 21 oz cream cheese
- food coloring

For the outer layer of frosting:

- 10 fl oz cream
- 9 oz cream cheese
- 1½ oz sugar
- 1 tsp vanilla extract

For the decoration:

- many, many gummy bears

Here's How:

1. Mix the cake ingredients together until a smooth batter forms. Then gently fold in the colored sprinkles.

2. Evenly divide the batter between two round cake pans and bake at 350°F for 30 minutes.

3. Carefully level the top of the cakes for a smooth surface, and then cut them both in half.

4. Make the buttercream frosting, divide into three separate bowls, and dye each one a different color with food coloring. Spread the first color over the bottom cake layer.

5. Lay the second cake layer on top of the buttercream frosting and continue with the next color.

6. Once you have 4 cake layers and 3 buttercream frosting layers, make the outer layer frosting and spread it evenly over the entire cake, making sure to spread an especially thick layer over the top.

7. Now for the fun part! Sort you gummy bears by color and firmly press them into the frosting. You're free to arrange them as you wish, but a fun rainbow effect goes a long way.

8. For the cherry on top – add a bunch of gummy bears to the top of the cake for the crowning glory. Chill the cake before serving to help the gummy bears set.
