When it comes to fruit, there's no denying that apples are one of the most popular, and that's certainly not because they make for a healthy snack. While an apple a day will keep the doctor away, this tasty fruit is probably most loved for its versatility: chopped, puréed, glazed, roasted, baked — no matter how you slice it, apples taste good in any way, shape, or form, especially in this delicious recipe that will make them the star of your award-winning pie.
You'll Need:
For the apples:
- 5 red apples
- 1 tbsp sugar
- juice of 1 lemon
- 1 tbsp cinnamon
For the pie crust:
- 4½ oz flour
- 4½ oz butter
- 1 egg
- 1 tbsp sugar
- 1 pinch of salt
- 1 tbsp water
- flour for your work surface
For the pie pan:
- butter
- dry legumes
For the pudding cream:
- 10 fl oz milk
- 3½ fl oz cream
- 4 egg yolks
- 3 tbsp sugar
- 2 tbsp corn starch
- 2 oz butter
- 1 tbsp vanilla extract
Here's How:
1. Wash the apples, remove the cores, and cut them them into thin slices. Toss the apple slices with the cinnamon, sugar, and lemon juice, and set aside.
2. Now take care of the pie crust. Knead all the ingredients into a dough and shape it into a ball. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
3. Flour your work surface and roll out the dough. Generously coat your pie pan with batter and put the dough inside. Cut off any dough hanging over the edges, poke holes all over the floor of the crust with a fork, and place a large sheet of parchment paper over the pie. Pour dry legumes or beans into the pan until completely filled. Put the pan in the oven and bake at 340°F for 20 minutes.
4. Heat the milk, cream, egg yolks, sugar, and corn starch in a saucepan over a low heat and stir constantly. When the cream begins to thicken, remove the pot from the heat and stir in butter and vanilla extract. Remove the legumes and the parchment paper from the pre-baked pie crust, pour the cream inside, and smooth out the top.
5. Now arrange the apples over the pudding cream in the design shown in the video.
6. Bake the pie for 20 minutes at 340°F.
