Heavenly Banana Bread Dessert Tower In A Glazed Chocolate Shell

Just like in the famous song about bananas, "Day-O (The Banana Boat Song)" sung by Harry Belafonte, your shift is probably over and you just want your work to be counted up so you can head home and treat yourself to a decadent dessert. If it's bananas you crave, then it's bananas you'll get with this stunning recipe featuring a banana bread tower encased in a chocolate hard shell, complete with layers of cream. You'll definitely go bananas for it!
You'll need:
- 1 loaf banana bread
- vanilla pudding
- 14 oz dark chocolate
- 2 strips transparency film (4 inches high)
- whipped cream
- chocolate pearls
For the dulce de leche:
- 1 can sweetened condensed milk
- 1¾ fl oz milk
For the caramelized bananas:
- 3 tbsp sugar
- 2 tbsp butter
- 3 tbsp rum
- 3 large bananas, sliced
- ½ orange
Here's how:
1. First prepare the dulce de leche by boiling the can of sweetened condensed milk in water for 3 hours. Once it has cooled, mix the contents of the can with milk in a large bowl.
2. Cut 3 evenly-sized sections out of the banana bread with a round glass (do not use the end slices of the loaf).
3. Coat the top of each banana bread circle with the dulce de leche.
4. To prepare the bananas, first caramelize sugar in a pan and then add butter. Once it's melted, pour in the rum and flambé the whole thing. Add a splash of orange juice to the pan and then fry the banana slices.
5. To create the banana bread tower, place one of the coated banana bread circles on a plate and wrap a strip of transparency film around it. This will serve as the base of the dessert.
6. Top the banana bread circle with two caramelized bananas and some vanilla pudding. Repeat this process 2 more times to create a total of 3 layers of banana bread, caramelized bananas, and vanilla pudding. Refrigerate the dessert tower for 1 hour.
7. Remove the first strip of transparency film. Take the second strip, spread melted dark chocolate over it, and wrap it around the dessert tower. Refrigerate the dessert for 2 hours.
8. Finally, add a dollop of whipped cream and sprinkle a few chocolate pearls or chocolate chips on top and enjoy this stunning work of art.
