Do you have a few ripe bananas in your fruit basket? Then simply transform them into a tasty banana tiramisu. With a little espresso, you can add the finishing touch to this refined dish, which will make you the hero of any upcoming birthday or celebration. This dessert recipe is not only really delicious, the shot of rum gives it that little something extra.

You'll Need:

For the banana bread:

- 4 ripe bananas
- 5⅓ oz soft butter
- 7 oz sugar
- 2 eggs
- 7 oz flour
- ½ tsp salt
- 1 tsp baking soda
- 3½ oz walnuts, roughly chopped
- 1 tsp vanilla flavoring

For the tiramisu filling:

- 23⅔ fl oz
- 5⅓ oz sugar
- 2 fresh bananas, sliced
- 2 tsp instant espresso granules
- 1 tsp rum (optional)
- 4 tbsp water

For the decoration:

- 1 oz cocoa powder

Here's How:

1. Take four bananas and mash them in a bowl. Then mix the butter, sugar and egg together, and add them to the mashed banana. Sieve the flour, the baking soda and the salt well, and then add them as well. Stir all the ingredients into a smooth batter. Finally, carefully fold in the walnuts.

2. Put the batter into a loaf pan lined with baking parchment. Bake it for 60 minutes at 350°F until the top is golden brown and firm. When the banana bread is done, you have to leave it to cool. Then cut it in slices roughly ¼ inch thick and use them to line the bottom of a casserole dish.

3. Dissolve the instant coffee in cold water, and a little rum if that's your thing. Use a pastry brush, spread half of this mixture on the banana bread in the casserole dish.

4. Next, mix the cream and the sugar, then beat it until the mixture is stiff. Then cover the banana bread layer with some of the sweetened cream, making sure it's completely covered.

5. Cover the layer of whipped cream with fresh banana slices, then put another layer of banana bread on top. Apply the rest of the espresso-rum mixture to the banana bread, then add another layer of cream on top and smooth it out flat.

6. Finally, use a sieve to sprinkle a layer of cocoa powder over the cream, until you can no longer see the cream.
