Up to 10 ft in length, weighing nearly 1,000 lbs and covered in black and white stripes. Those are the essential attributes of zebra and while we're sure bringing one to the next kids' birthday party you have to plan would be a hit, baking this zebra cake is much, much easier!
You'll Need:
For the batter:
- 10 egg yolks
- 10½ oz sugar
- 1 tbsp vanilla flavoring
- 3½ fl oz water
- 13½ fl oz vegetable oil
- 3 tsp baking powder
- 28 oz flour
- 10 beaten egg whites
- food coloring in pink, black and white
In addition:
- pre-prepared buttercream in white and pink
- black fondant icing
Here's How:
1. Mix the egg yolks, sugar, vanilla flavoring and water with an electric whisk in a large bowl. Then stir in the vegetable oil, and work in the baking powder and the flour with a hand whisk. To finish, fold in the beaten egg whites and stir everything until you have a smooth batter.
2. Now divide the batter into three bowls in equal portions and use the food coloring to color one pink, one white and the last black.
3. Now take two greased springform pans and pour a ladle of the white batter in the middle of both pans. On top of each one, ladle a portion of the black batter, and then a ladleful of pink batter on top of that. Repeat these steps in the same order until all the batter is in the molds.
4. Bake both cakes for 60 minutes at 320°F in a convection oven, then leave them to cool. Remove both cakes from the pans and cut the top away from both to create even surfaces.
5. Now, place the first cake on a cake plate and spread it evenly with white buttercream. Then turn the second cake upside down and set if on top. Then cover the entire cake with the white buttercream and chill it.
6. Roll out the fondant icing on your work surface and cut it into pointed strips. Put the strips, slightly offset from each other, all over the cake to create your zebra print.
7. For the final flourish, use a piping bag to apply small dabs of pink buttercream around the base of the cake.
