Easy Pretzel Cookie Recipe | Good Housekeeping UK

These chocolate pretzel cookies are a quick and easy dessert to make, and are perfect served warm with milk. Mix and match treats to create your own personalised cookie – use anything from chocolate chunks to dried fruit and nuts… Even pretzels!

Ingredients
150 g (5oz) unsalted butter
150 g (5oz) light brown soft sugar
150 g (5oz) granulated sugar
1 large egg
300 g (11oz) plain flour
1 tsp. baking powder
250 g (9oz) additions - we used chocolate chunks, mini marshmallows, dried cranberries, salted peanuts and pretzels

Directions
In a small pan, melt the butter. Pour the melted butter into a large bowl with both of the sugars and beat with a hand-held electric whisk until sugars have melted slightly. Cool for 5min.

Beat in the egg, followed by the plain flour and baking powder to make a dough. Using your hands, mix in your chosen additions, and then wrap dough in clingfilm and chill for 20min.

Preheat the oven to 180°C (160°C fan) mark 4. Shape the dough into 15 balls and place (about 5cm/2in apart) on baking sheets lined with baking parchment – you may need to bake in batches. Squash balls down slightly and bake for 15-18min until lightly golden around edges. Leave to cool on the sheets for 5min, and then transfer to a wire rack to cool completely.
