വ്യത്യസ്തമായ ഒരു മുട്ട കറി .എല്ലാത്തിന്റെയും കൂടെ കഴിക്കാൻ പറ്റിയ കറി|| Green Masala Egg Curry

Ingredients:
Egg – 5 (Hardboiled and deshelled)
Potato – 1 medium (Cut into small pieces)
Onion - 4 (Roughly chopped)
Ginger – 1 big piece
Garlic – 8 fat cloves
Green chilly – 10 small + 3 for garnish
Pepper powder
Garam masala - ¾ tbsp
Vinegar - ¾ tbsp
Coconut milk – 3 glass / Milk of 1 small
Coriander leaves
Salt
Oil

Steps:
Grind onion, ginger, garlic and green chilly to a smooth paste without adding water.

Heat oil in a pan.
Add potato and roast till light golden.
Remove and set aside.

Add the onion paste and salt to the oil.
Cover and cook on medium low flame till the oil separates.
It took me around 30 minutes on low flame.
Add garam masala and pepper powder and mix well.
Add coconut milk and coriander leaves.
Cover and cook on medium flame till the oil separates.
Add fried potato, eggs, coriander leaves and vinegar.
Cover and cook till the gravy thickens.
Add slit green chilly and coriander leaves.
Cover and cook for another 5 minutes.
Enjoy the egg curry with chapathi, bread or rice.
