About Lidl's lobsters:
Lidl's lobsters are MSC certified. They come from New Brunswick in Canada, where the fishery is managed to protect healthy stocks so that the numbers are buoyant and the lobsters are in the best possible condition.

Fishermen, based in villages along the shoreline, use biodegradable baited traps which are fitted with escape panels to reduce the number of small lobsters that are caught and help other creatures escape.

The fishery bans the landing of undersized lobsters or females with eggs, which are returned to the sea to breed.

Ingredients:
1 Deluxe Whole Cooked Lobster
60g Tagliatelle Pasta
½ Carrot
1 Celery Stick
½ Onion
10g Fresh Chives
60g Mascarpone Cheese
5g Tomato Puree

Method:
Defrost the lobster, remove the claws by pulling away from the socket. Separate the head from the tail by holding firmly and twisting until the pieces break apart. Remove the meat from the tail by laying it on it’s side and using the palm of your hand, press firmly down to crack the shell. Remove the meat and chop into bite sized pieces.
To remove the meat from the claws, firmly tap on it with a rolling pin. Peel away any loosened shell and pull out the meat Once all meat has been removed, chop into bite sized pieces..
Take the shell, wash and remove any leftover meat. Roast the shell in the oven with the carrots, onions and celery until caramelised.
Once roasted, put the shell and roasted veg in a saucepan and add enough water to cover. Stir in the tomato puree and simmer for 45 minutes.
Strain the stock and continue to simmer until it has reduced by two thirds.
Blanch the pasta in salted boiling water. Whisk the mascarpone into the reduced stock. Add the lobster and cook until heated through, then add the pasta. Mix well.
Finish by sprinkling with some chopped chives. Serve in a warm bowl.
