Not one for topping your pancakes with lemon & sugar, currants, or chocolate? This Shrove Tuesday, try a savoury alternative - stuffing American-style batter with crispy bacon, fresh veg and oozy melting cheese. Mmm. Full method below.

INGREDIENTS:

For the pancake batter:

1 tablespoon baking powder
1 pinch of salt
1 teaspoon white sugar
2 large eggs (beaten)
30 grams butter (melted and cooled)
300ml (1/2 pint) milk
225g (1 cup) plain flour
Butter for frying

For the cheesy bacon and veg toppings:
6 bacon strips, cut into fine squares
1 can of sweetcorn
1 red or green pepper, cut into fine chunks
100g mushrooms, finely chopped
4 spring onions
100g mild cheese, grated

METHOD:

Start with the batter:

1. Take a large mixing bowl and mix together all the dry ingredients, make a well in the middle of the mixture with your finger and crack the two eggs into the well. Add in the milk slowly (to avoid lumps) and mix together until smooth. You can set it aside in the fridge while you cook your toppings.

Now the cheesy bacon and veg toppings:

2. Fry the bacon until crispy and the vegetables individually until cooked through. Combine in a large bowl.

Time to combine!

3. Heat a frying pan on the hob to a medium heat. Add a little butter to the pan and let it melt down, pour in enough batter to make the pancake (we did ours about 10-15 cm wide). Add a spoonful of your glorious savoury pancake mix. When the surface of the batter begins to bubble, and the underside has cooked and browned, it's time to add a sprinkling of grated cheese, allowing it a few seconds to melt in, and then we flip!

4. Flip the pancake and continue to fry until everything is cooked through.

To serve, garnish with any remaining spring onions.
