材料/Ingredients:\r
一隻三斤重的鴨子 1 duck (1.8kg)\r
六粒酸梅(一百三十五克)6 pickled plum (135g)\r
片糖一片,冰糖一塊,共一百三十五克 1 slab of brown sugar, 1 piece of rock sugar (135g)\r
一茶匙半雞粉1.5tsp chicken powder\r
五湯匙(約七十五毫升)老抽 5tbsp/75ml dark soy sauce\r
一茶匙胡椒碎 1tsp ground black pepper\r
兩條肉桂條 2 cinnamon sticks\r
三粒八角 3 star anise\r
六粒紅蔥頭 6 shallots\r
六粒蒜頭 6 cloves of garlic\r
三片拍鬆了的薑片 3 slices of ginger\r
適量橘子皮 orange peel\r
兩茶匙幼鹽 2tsp table salt\r
