China Street Food - Xi'an Style Liangpi Cold Noodles

Despite the wide variety of rice and wheat noodles to choose from, they are all prepared the same way with an underlying base of shredded cucumber. Sesame oil, black vinegar, soy sauce is then drizzled on top. Spring onions, cilantro, and chili oil are optional. The most popular are the liangpi noodles, which have a chewy texture.
