❤ ❤ ❤ NUT ROAST WITH SWEET POTATO ❤ ❤ ❤ \r

Peel and shred 2 large sweet potatoes.\r
\r
Cover cake tin with parchment paper and press the sweet potatoes into the tin.\r
\r
Bake for 30 mins at 200C or 425F.\r
\r
Mix together 400g shredded mushrooms, 300g ground nuts, 1 shredded onion, 2 tsp garlic paste, 2 tsp ginger paste, 2 tbs soy sauce, ¼ c or 60ml hoisin sauce.\r
\r
Put nut roast mixture into the sweet potato case and bake for further 45 minutes.\r
\r

\r
Boil 1 cup black rice, 3 cups water and big pinch of salt.\r
\r
Simmer on low for 45 minutes.\r
\r
Add ½ cup rice malt syrup and 1 can (15 oz 425g) coconut milk unsweetened.\r
\r
Boil then reduce heat to low and simmer for a further 30 mins.\r
\r
Continue to stir periodically.\r
\r
Add mangoes, bananas, more coconut milk and coconut shreds.\r
\r

Heat olive oil in pan and add 1 large sweet potato (cubed and roasted), add 1 diced red onion and 2 tbs mild curry paste. \r
\r
Stir for 5 minutes on medium heat.\r
\r
Add enough water to cover the potatoes and add 3 veggie stock cubes.\r
\r
Add 4 large chopped fresh tomatoes and a can (15 oz 425g) of crushed tomatoes.\r
\r
Simmer for 20 minutes on low heat.\r
\r
Stir in 120g cashew nuts, 1 bunch of chopped coriander leaves/cilantro and a can (15 oz 425g) of chickpeas.\r
\r
Take off heat and stir in yogurt and coriander and cashews\r
\r

1 large bunch of kale leaves (stems removed)\r
1 tbs olive oil\r
Chilli and salt to taste\r

Massage oil into pieces of kale leaves and season well. \r
\r
Bake for about 25 minutes at 300F / 150C.\r

Stir fry half an onion (diced).\r
\r
Boil 1 serving of soba noodles in water for 2-3 minutes until soft.\r

Put 1 tbs kale pesto into hot pan and stir in noodles.\r
\r
Add handful of sweetcorn and onions.\r
\r
Top with some superfood sprinkle.\r
\r

3 tbs nutritional yeast flakes\r
¾ tsp salt\r
