Chilli Potatoes is a super delicious Indo Chinese fusion appetizer dish. They are made by frying potato strips and then cooked with spicy and tangy sauce mixture to make them super tasty. I must warn you they are very addictive. They are soft, spicy and definitely mouthwatering. This recipe is so easy to make at home and also loved by kids. So try them anytime and enjoy.\r

Ingredients:\r
\r
3 Potatoes (medium size cut in stripes)\r
2 tbsp Corn Flour\r
½ cup Spring Onion Whites (chopped)\r
¼ cup Spring Onion Greens (chopped)\r
Oil (for frying and cooking)\r
1 tbsp Garlic (finely chopped)\r
1 tsp Green Chillis (finley chopped)\r
Salt (according to taste)\r
3 tbsp Tomato Ketchup\r
1 tbsp Soya Sauce\r
2 tsp Vinegar\r
1 tbsp Chilli Sauce\r

Instructions:\r

1. First wash and peel all potatoes. Now cut them into quarter inch thick slices. Once all potatoes are cut into stripes, wash them properly and drain them to remove any extra starch. Now take some corn flour and sprinkle it on potatoes stripes, flour helps in making them little crispy. Now mix them thoroughly so that all stripes are covered with flour. If you have readymade frozen potatoes fries you can also use them.\r

2. Now we will fry them, so heat oil in a wok till its medium hot. Check if oil is ready by dipping a potato stripe, if it sizzles that means oil is ready to fry. Now add potatoes stripes in oil and fry them on medium heat. Keep flipping at regular intervals to fry them uniformly, it will take around 10-12 mins to fry one batch of fries. When potatoes stripes start turning slightly brown it means they are ready, so drain them out on a paper towel.\r

3. Now we will make sauce mixture. For this first take a small bowl, in this add chilli sauce, tomato ketchup, soya sauce and vinegar and mix them well.\r

4. Now lets cook fried stripes and sauce mixture together. For this take another wok and put on medium high heat. Now add oil, when its hot add garlic, green chillies and saute them for 20-30 sec on medium high heat. After that add spring onion whites and saute again for 20 secs. Because we are cooking on medium high heat, so keep sautéing them continuously to avoid any overcooking. \r

5. Now add sauce mixture we made earlier and mix it well. After that add a little salt be careful not to add too much salt as we already have salt in all sauces. Now add green onions and mix it again. After that add 3-4 tbsp of water and mix them again and let it get a boil for 10 sec. When the sauce mixture starts bubbling its time to add fried potatoes stripes. Now mix them thoroughly with sauce so that all potatoes stripes are covered well in sauce mixture.\r

6. Just cook it till sauce mixture covers all potatoes stripes. Now they are ready so take them out in a plate and further garnish with chopped green onions to give a yummy look.\r

Tips n Tricks:\r

1. You can also keep fries and sauce mixture cooked separately in advance and toss them together whenever you want to serve.\r
2. Change spiciness, chilli according to your own taste.\r
