Quick Pickled Red Onions:\r
1/2 red onion thinly sliced\r
submerge and blanch in hot water for 1 min then drain\r
\r
1 tsp Kosher Salt\r
1 tbsp sugar\r
1/4 cup rice wine vinegar\r
1/4 cup water\r
1 bay leaf\r
1 tsp whole peppercorns\r
1 garlic clove crushed\r
\r
mix until sugar and salt dissolve. Add onions and let pickle 30 min at least\r
\r
1 yellow onion, chopped (split into two piles)\r
1/2 orange\r
1/2 lemon\r
1/2 cup chopped cilantro\r
5 minced garlic cloves\r
2 lb pork butt, roughly chopped\r
kosher salt\r
pepper\r
\r
Instant Pot Carnitas:\r
Set on saute mode, let it get hot\r
add 2 tbsp olive oil and brown the pork, 3 min on each side in batches.\r
Add the onions (1/2 of the chopped bunch) and minced garlic\r
1 tsp kosher salt\r
1 tsp ground cumin\r
1 tsp Mexican oregano\r
1 Bay Leaf\r
1/2 lemons juice (throw in the peel)\r
1/2 oranges juice, throw in peel\r
chopped cilantro\r
1 cup chicken broth\r
pepper\r
\r
Meat/Stew setting for 35 minutes on High pressure. Natural release for 15 min. Transfer the meat into a pan, mash it up, season with salt, broil 10 min to get crispy.\r

Tortillas:\r
1 cup White Masa Harina\r
1 tsp Kosher salt\r
1/2 cup water\r
mix and form into a dough. Cover and rest 5 min. Roll into golf-ball sizes and flatten with press. Fry each side 1 min\r
