Taking a few minutes to prepare and portion the ingredients in advance means the finished dish can be rustled up with minimal fuss in just a few easy steps!!

INGREDIENTS:
250g boneless chicken thighs, diced
1 tin coconut milk
2 tsp coconut milk powder
½ jar Thai red curry paste
1 bag ready-prepared stir-fry vegetable mix
1 chilli cut in half lengthwise
1 chicken stock pot
Rice of your choice, to serve
Coriander leaves to garnish
