Mac & Cheese - BEST EVER !

This is the BEST Mac & Cheese recipe you will ever make, and you can change it up a bit easy just by changing pasta or the kind of shredded cheese you add. Watch what happens at the end if you leave it unattended! Heres the recipe below. This is a BIG batch! Order yourself new pot here (Youll need one!) \r

4 to 4-1/2 cups Macaroni or other noodles\r
1 stick butter\r
1/2 cup All Purpose Flour\r
1 heaping tsp Paprika\r
3 cups milk (Might take a bit more)\r
16oz package velveeta cheese cubed\r
1/2 cup grated Cheddar or other cheese\r
4 slices American Cheese\r
Salt and pepper to taste\r

Topping (optional for baked version)\r
3 tbs butter\r
1 cup panko bread crumbs\r
1 cup grated cheddar or other cheese\r

To make topping: Melt butter and toss in bread crumbs. Keep cheese separate.\r

Preheat oven to 350°. Cook Macaroni noodles until al Dente drain in colander well. In the same pot as the noodle were in to melt the butter, Whisk in the flour and Paprika to make a paste (Rou). Gradually whisk in the milk. Bring to a simmer over medium heat, whisking until thickened, about 1 minute. Add the Velveeta and other cheeses, salt and pepper. Whisk until smooth. Stir the cooked noodles into the cheese sauce. Scrape into A Big Casserole dish. Sprinkle the cheddar cheese on the top then the bread crumb topping. Bake UNCOVERED until bubbly and lightly golden on top, 20-25 minutes. Let stand 10 minutes before serving.
