Peking Duck is a traditional Chinese dish that chefs have been making since the ancient days of the imperial era. The dish was first served as early on as the Yuan Dynasty, but became popular during the Ming Dynasty, and by then it was already one of the main dishes in the imperial court. Those who know their Peking Ducks know that it’s all about the crispy skin, it’s hands-down the best part of the whole dish. In many Peking Duck restaurants, the duck is often brought tableside, sliced in front of the diners by the cook or a waiter, and served with thin pancakes, scallion, sweet bean sauce, and cucumber. Take a piece of each ingredient, place it upon the thin pancake, make it into a roll, and ascend into food heaven. Those who know their Peking Ducks know that it’s all about the crispy skin, it’s hands-down the best part of the whole dish.
