Bacon Cheeseburger Tot Casserole\r
2 pounds ground chuck\r
1 yellow onion, diced\r
3 garlic cloves, minced\r
1 teaspoon dried oregano\r
1 teaspoon ground cumin\r
1/4 teaspoon cayenne pepper\r
1 teaspoon salt\r
1 teaspoon black pepper\r
1/2 cup ketchup \r
1/2 cup mayonnaise\r
Cooking spray\r
12 slices bacon, cooked until crispy\r
2 cups sharp cheddar cheese, shredded \r
1/2 cup pickled jalapenos, chopped, plus more for toppings bar\r
2 1/2 cups frozen tater tots, defrosted and sliced in half \r
2 avocados, diced, for toppings bar\r
3 vine ripe tomatoes, diced, for toppings bar\r
Pickles, for toppings bar\r

1.Preheat oven to 350F.\r
2.Brown beef in a large sauté pan over high heat. Once beef is browned add onion, garlic, spices, salt and pepper and cook until onion is translucent and spices are fragrant. \r
3.In a small bowl mix together the ketchup and mayonnaise. \r
4.Grease a 9x13-inch baking dish with cooking spray. Add half of the beef mixture to the baking dish. Top with bacon slices, 1 cup of cheddar cheese, and the mayonnaise sauce. Sprinkle the pickled jalapenos over the sauce. Spread 1 1/2 cups of tater tots over the jalapenos, add the remaining beef mixture and tater tots. Sprinkle remaining cheddar cheese over the top and bake in oven for 30 minutes, until the casserole is hot and cheese has melted. Serve casserole with your favorite toppings.\r
